Fabulous fried Zeppole di San Giuseppe, perfect recipe by Sal de Riso, the famous Neapolitan master pastry chef whose Zeppole and lemon delights are among my absolute favorite recipes! Sal de Riso's fried zeppole recipe is really delicious and easy to make at home! As for the custard instead, I used my personal recipe as Sal de Riso uses double the yolks I use on a liter of milk and personally I prefer a custard with less yolk. But that's just my personal taste.
Here is my cream recipe. the recipe for zeppole di Sal de Riso and finally also its custard so if you prefer you can use its weights for the cream too!
SAL DE RICE ZEPPOLE RECIPE:
(FOR ABOUT 16 ZEPPOLE )
250 g of 00 flour
250g water
100g butter
6 whole eggs
6 g salt
SAL DE RISO CUSTARD RECIPE:
800 g whole milk
200ml cream
12 yolks
300g sugar
90 g corn starch
4 g salt
lemon peel
vanilla

800g milk
200 g fresh cream
250g sugar
6 yolks
vanillin
Lemon peel
110 g corn starch
