FETTUCCINE WITH RICOTTA:
1 lb Homemade Fettuccine Pasta (or your favorite Pasta) (453g)
1 lb Whole Milk Ricotta (453g)
1 cup Pecorino Romano Cheese, grated (100g)
¼ cup Fresh Parsley, chopped (5-10g)
¼ tsp Black Pepper or to taste (1.5g)
½ tsp Salt or to taste (3g)
½ cup Hot Pasta Water (120ml)
Sprinkle Fresh Parsley & Pecorino Romano Cheese on top before serving

FAQ:
Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?
We print out and show her how much love she gets from all her viewers, and she is very thankful and hopes you enjoy her cooking! Your comments bring her lots of joy, laughter, and inspiration to make more videos to share with you.

Gina has such joy in her face when she does these videos. Love today's story about her mother making the food and sharing with others in need. Yesterday I made her recipe, biscotti with almonds and dried fruit. When I go to NYC, I love to buy them at the Italian bakeries. It will be awhile before I return to NYC. Had never made biscotti before. They came out well. Yum, with coffee!!!! Hello to Gina from Northern Virginia.

That looks delicious. You are so sweet. My momma was so poor when she was little. An Italian family with 8 children. She said they didn’t eat for 3 days. A neighbor took pity & gave my Nonna some flour to make bread. They were so grateful that my Nonna thanked her by making bread for her. God bless & stay safe.

All those years growing up in an Italian family, I've never heard of pasta with ricotta like this. I feel that I have been cheated. Going to try this over the weekend. Bought too much ricotta for Easter and am looking for ways to use it up. Thank you Gina.

I just ran across your channel a couple of days ago and I'm captivated by your sweet spirit, your cooking skills and the fact that you're a kind, generous and classy lady. Oh Gina thank you gain for sharing your recipe and memories. My Grandparents grew up during the depression. Grandma and Grandpa struggled but they always had food for the table. Anyone that came to her door she somehow was able to feed them too. They raised a lot of chickens and vegetables on their 2 acres in Penn Hills, PA. She shared whatever she had with the neighborhood as well. Grandpa always had at least 3 jobs going...not all were full time as it was hard to get work during those days. All the neighborhood kids would end up at the Fabrizi household as they knew Grandma would make them something to eat and all were welcome. I loved listening to hear tell us stories of the old days. Such cherished memories, just like I cherish the time you share with us. God Bless you! Anna Marie....

When Gina gets emotional it brings tears to my eyes. She recalls times of hardships with such heartfelt emotion. My mother was just a year older than Gina, and she spoke about how food was so scarce after WWII in Italy when she was a girl...Gina should do an Instagram live and lead us in prayer, perhaps we can do the rosary along with her. I'm a registered nurse , work is a little stressful at the moment, so when I come home from the hospital I watch Gina and relax. I like to cook and bake from scratch, and find her recipes easy to follow. I've already made sausage and peppers , and stuffed eggplant, but most of all I just enjoy listening to her, her singing, stories about her family, and her faith in GOD. She is so genuine. Sometimes at work a few of us watch her videos , she's getting a fan club around here. Keep the videos coming , they not only make you hungry, but are comforting as well. And by the the way I love the way she says just follow me what I'm doing, and when she adds the salt makes me smile.

Listening is like a time capsule of the past. Thank God we have people like her to tell us the stories of hardships endured by the old people. Why do I always feel like crying at some of these videos ? by the time I read the comments I am surely crying happy and sad at the same time for what you and George but how you got through it and now a source of Hope and family Warmth.

Gina, your food looks wonderful and your stories are even better! My Gramma told me stories of how her momma would make a meal for anyone that needed food and showed up at their door. Gina! I love you! Such a great cook with such a positive attitude. My mom made shells with ricotta and parsley like you...on just about every Friday. If it wasn’t this, way it was macaroni with oil and garlic and parsley. Both those pasta dinners were accompanied by a large cheese pizza. My dad picked up the pizza when he got off the #2 train subway from manhattan and went right into Lisa’s pizza to pick it up. It was ordered by my mom. When he left work in nyc.

It's just for the lucky ones to have a Nonna like Gina happily making homemade pasta (Italian original) for her entire family. It must be wonderful eating fettuccine without those chemicals they put in industrial pasta in order to preserve. And finishing, a simple and delicious sauce accompanying the fettuccine. Oh, I'm so happy to see a new video!! I've just discovered your videos last week and I can't stop watching them! I've also told my parents to watch you and now they also can't stop! Thank you for sharing with us your wonderful recipes and talents! I love your singing and how you explain everything. I also love hearing your stories. My grandmother came from Italy, but unfortunately she passed away when I was young so I never got to hear her stories. Thank you for blessing us with yours. Grandma it's April 17 ,there's no pasta of any kind on the shelves all are empty. :( we will never know the kind of hardships you and your family endured we are blessed in America for certain. God bless you and your whole family.
