Lol. I’m laughing out loud when you told the story of the cat getting into the food. Then whatayougonnado? We bring to the sink and we wash it in the sink and put it back in the sauce!!! Perfect!!! You can’t throw it out. That had to be the cleanest sauce ever. I just love your stories grandma Gina. Thank you for bringing these stories to us. My grandma lived with us Her name was Rosina and she was from Sicily. When her daughters Catherine and Rose would come over it was hilarious. It was the three sisters. My mother Josephine and her sisters Rose and Catherine and grandma Rosina. They would laugh and laugh about the old stories from Italy and New York. Wonderful memories.

I read some comments complaining about the alleged slowness of the videos. Some other people claim she'd need a blender to make it quicker. Here's what I think. Gina works in a kitchen which is the equivalent in size of a Hilton suite, if she needed a processor, she'd have a processor. She needs not, it's just that simple. You see, I think you're missing a little background here. Gina is not one of your ordinary granmas. Gina was born in the south of Italy, during times when cooking was as natural as breathing. You grew up and just learned by watching, because you *had* to help. Little canned food around, no "pret-a-consommer" on the shelves. These recipes (and derivatives, as this one) are hard-coded deep into her DNA. She could easily prepare stuffing single-handedly while staring at you with a daring glance waving her wooden spoon ("LA CUCCHIARELLA"), just because. She knows how food has to be prepared. Sure, some scientist may even explain that blending with a processor actually increases air-food surface favoring oxidation and degrading taste. Gina needs no such fancy words. She knows it because someone before her has tried using a blender in the last 40-50 years and no, the taste was not exactly the one they looked for. Or maybe the texture, or whatnot. But I think there is even more. She just knows that cooking (in that manner) is a labor of love. It has to be done in due time, no less, no more. There is no speedup in love, as there is no speedup in the kitchen. Proper food is love, preparing it in that precise manner is the best way to start enjoying your meal way before the dinner actually begins. And this, besides all other tips and tricks sprinkled around, is the true lesson this woman is striving to teach. Long live Gina!

I learned this stuffing from my mother; just no sugar or raisins, but everything else the same. I make it every Thanksgiving for our family of 25-30 and everyone loves it. Also, years ago my mother had left a plate of Sunday gravy meat (2 lbs meatballs, brociole, lb of sausage) that she had browned on the counter before we went to Mass. When we returned, our dog who was quite large, had eaten all the meat. I think we had marinara sauce instead of Sunday gravy that day! Thank you again for always bringing back wonderful memories for me. Benedizioni a te.
