Het is weer bijna november, de tijd van het jaar voor Wanderlust-soep. Ik heb nog een korst parmezaan liggen voor de soep. De boerenkool heb ik niet, wel sperziebonen. Dat is het fijne van minestrone, gewoon een restjessoep.

Yep, good recipe in only 2 minutes. Interesting that you have a persistent stain at bottom of your cast iron enameled pot. I like to cook the pasta separately otherwise the pasta becomes mushy with leftovers and you can refreeze the rest.

All enamel coated cast iron develops stains over time. They can be bleached out by simmering a solution of baking soda and hydrogen peroxide. I leave it. It’s a sign how much the pot is loved.

In our minestrone we don't use lemon juice (in fact it doesn't make any sense), nor parsley, nor bay, but rather nutmeg and freshly ground black pepper. The chilli pepper only if you like it (optional). The most used pasta are the cannolicchi rigati, a little larger than ditalini, so that the peas and beans fit inside. The type of kale we use is the Tuscan black kale or cavolo nero and we often add green beans, leaf of spinach or mushrooms. The minestrone is a recipe of excellence especially in Tuscany, Campania and Rome. A little trick: the parmigiano should be added directly into the pot with the heat off and mixed to make the whole thing creamy. Finally, the minestrone should be served soupy and not dry. Your recipe is OK though.

It turns to mush overnight. The liquid gets absorbed and it's just mush.

Hi Charles, you are correct. This happens with any soups that contain pasta. So, I have added this note into the recipe card to alleviate this problem: If you know you will have leftovers, I recommend you boil the pasta separately, add individual portions into individual bowls when it is served and then store it separately from the soup so that the pasta doesn't absorb all the liquid when it is stored in the refrigerator.
