I wish they didn’t know that the foods were vegan before trying in this series. I feel like some of them already came in with a negative mentality about the food being vegan.

@Jerry Gallo Most people don't care where their food comes from, seeing as less than 1% of the world is vegan. So yes, it is vegan food that needs to improve if it wants to compete with meat-based diets, or even vegetarianism (more than 10% of global population).

Lupita - She doesn't know how to cook. She claims she was vegan for 4 months and didn't have any food that tasted good. Even a basic home cook can make delicious vegan food.

@@rapcat1271 I think her “critic” isn’t judging the food on flavor, texture and presentation but rather how it stacks up to her traditional view of what a pizza “should” be. There is a pretty large bias there. The one who gave it an 8 was able to enjoy the pizza presented while also acknowledging that it doesn’t represent a “traditional” pie. I think if we were all to move forward with each other it would be great to look beyond what may seem culturally different and enjoy food with all the love that was put into it. There are many cultures that prepare the same base meal with slight or obvious variations on meals, arepas and tamales come to mind. Vegan food is food anyone and everyone can enjoy and although it may change up the formula it’s still food made with love and a willingness to share. Im glad she gave this pizza an 8 and was able to enjoy her meal!

I made vegan cookies last Christmas and sent them to friends in a little cookie box situation and forgot to tell them it was vegan, and when I brought it up afterwards in a conversation they were all like 'I don't believe that's vegan!' or 'I had no idea, it was really good' and 'those were the best cookies I've had in my life' honestly made my day lol

Here is the recipe ~v~ for those of you who want to make this bad boy INGREDIENTS Dough ⅓ cup water 1 teaspoon olive oil, plus more for greasing ½ teaspoon instant yeast ¾ cup all-purpose flour, plus more for dusting ½ teaspoon kosher salt Vegan Mozzarella 2 tablespoons raw cashews, soaked in boiling water for 20 minutes and drained ⅓ cup water 1 tablespoon refined coconut oil ½ teaspoon white miso ¼ teaspoon nutritional yeast 1 tablespoon tapioca starch 1 teaspoon lemon juice ½ teaspoon kosher salt Assembly Semolina or all-purpose flour, for dusting ⅓ cup crushed tomatoes ¼ teaspoon kosher salt Olive oil, for drizzling 6 basil leaves PREPARATION Make the dough: Add the water, olive oil, yeast, flour, and salt to a medium bowl. Mix until there are no dry spots, then cover and let rest for 5 minutes. Turn out onto a clean surface and knead for 2-3 minutes, adding a light dusting of flour if necessary, until the dough is smooth. Transfer to a clean, lightly oiled bowl and cover. Let rest in a warm place until doubled in size, 1-1½ hours. Transfer the dough to the refrigerator and let rest overnight, at least 12 and up to 24 hours. When ready to bake, preheat the oven to 500°F (260°C). Make the vegan mozzarella cheese: Add the soaked cashews, water, coconut oil, miso, nutritional yeast, tapioca starch, lemon juice, and salt to a blender or food processor and blend until smooth, 1-2 minutes. Strain through a fine-mesh sieve into a small saucepan. Place the saucepan over medium heat. Cook, stirring constantly with a spatula, for 4-5 minutes, until the mixture just begins to thicken and generously coats the back of a spoon. Immediately transfer to a small bowl. Assemble the pizza: Lightly dust a baking sheet with semolina and place the dough on the pan. Dust the dough with semolina then, starting in the center, use your fingers to press the dough out into a round about 10-inches wide. Stretch the dough using your hands as needed, and rotate the dough often as you shape it to prevent sticking. Spread the crushed tomatoes over the dough, almost to the edge. Evenly dollop 10-12 tablespoons of the vegan mozzarella over the sauce. (Note: If the vegan mozzarella seems thick, thin it with a little bit of water until runny.) Sprinkle the pizza with salt. Bake the pizza for 8 minutes, then broil for 2-3 minutes, until the cheese has started to brown, watching carefully so it does not burn. Remove the pizza from the oven and let cool for 5 minutes. @@Ashley-jx7sw it is okay to not like some foods! The problem here is the umbrella term that “all vegan food doesn’t satisfy taste”. That’s absolutely untrue, if vegan food had the amount of refinement and recipe adjustments as animal based food it would absolutely live up to people’s standards (and in my opinion, it already surpasses it). However, it’s new (plant based cooking really hasn’t made a rise until the 2000’s) and people have been using animal based ingredients for thousands of years. Another problem is saying that taste is more important than causing a sentient being harm, pain and taking their life for it. It’s just not equivalent. Imagine another species killing off your family for their meals (that they don’t need to survive) and you asking them to stop and they were just like “I’m sorry man, no can do, it tastes too good” like wow.

Being Italian I can say that I've had PLENTY of disgusting pizzas in Italy, made by Italians, with "classic" Italian ingredients. Food being vegan doesn't make anything immediately bad, just like using "classic" ingredients doesn't make every pizza a good one. Of course the cheese is not going to be exactly like mozzarella... it ISN'T mozzarella!!! :D I love Christina's attitude towards these tests!

She most likely wasn't vegan, just plant-based. She most likely doesn't even know the difference, either. Also, she obviously wasn't doing it right as she said that vegan food wasn't tasty - or maybe she was vegan a long time ago when there weren't many options, or in a location without options. She also must not know how to cook, as any basic home chef can make tasty vegan food. Her food knowledge is also obviously lacking as she called the pizza crust "dough" twice.

Merle - May I suggest getting store-bought vegan cheese - especially when introducing people to vegan options. They don't make their dairy cheese at home, and so you shouldn't try to make vegan cheese at home. Get the best of the best to offer people. You could even turn it into a partnership with some of those companies and maybe get sponsored. I love your videos, but I hope you offer higher-quality vegan options for these taste tests going forward. All the best!

Anyway, there are vegan artisan cheese shops and also some major vegan cheese companies that I'm positive you can't beat on taste, but if you can prove me wrong and start a company. I want to try it!

Ahhh yes, the closed minded omnivore, nothing quite like it... This would annoy me even before going vegan. My best friend became vegan years before I did, and I remember this bday party she had where she served DELICIOUS plant based food, and was criticized so badly for it. Some people went as far to spit the food out into a napkin. I wasn't vegan and it made me so mad, because they weren't even alternatives, just food that is accidentally vegan by default.

However, people’s snotty, closed minds toward vegetables was on par with a spoiled 11 year old. I am pretty sure Merle isn't offended by this because they were expecting something along these lines and it's what's considered entertaining in the video. But I know that people in the vegan community encounter this A LOT and it gets old really fast. A lot of love goes into making any type of food, but especially when trying to make something you're passionate about for someone, and when they aren't even willing to try something with an open mind it really sucks. If she would have tried the pizza and then given her opinion, it's fine, at the end of the day vegan cheese isn't for everyone. But she didn't even want to give it a shot because of how it looked, it was kind of ridiculous

Yeah! And it is okay not enjoying... regionally in Italy pizzas are very different. Additionally, someone from Verona would probably criticize pizza from Napoli, for example. People in Italy usually say that pizza in Rome is awful. I am for the flavor and the construction of affective taste memory, so I would probably enjoy it. I really don't care about traditionalism, as long as it tastes great. Hahaha

I have to correct you there, ALL MOTHERS from ALL CULTURES are extreme proud of the food they produce from their home. So this doesn't give her licence to be more critical. The taste test isnt "can we trick you to think this is cheese" it is just is this an acceptable version of pizza or lasagna made by a non-Italian

Okay, honest comment from Italian living in Italy AND vegan: I tried a coupla vegan margherita pizzas from proper pizzerias here in Rome and they weren't really good because cheese. So it's not a matter of home made pizza or American vs Italian. I suppose mozzarella isn't easy to replicate (but we'll get there someday as we did with meat substitutes). For now, I guess a vegan can stick to marinara pizza (tomato sauce, garlic, olive oil, oregano) or other vegetables and well, it works!

when ever I hear someone say ex vegan, I just take it as they agree with morality of it but couldn’t maintain living a vegan lifestyle for whatever reason . You can’t really call yourself vegan if you’re not actually living a vegan lifestyle

There is no eggs in shortbread :) The recipe is 3 cups flour, 2 cups butter and 1 cup sugar, vanilla extract and a pinch of salt. If you want to swap eggs, you have different ways of doing it. In a "Sablé breton" you can replace it with soy cream (very cheap where I live) and if you only need egg white like in "financiers" you can use aquafaba :)

Honestly I found Italians to be the most annoying in vegan comments section. UNTIL I witnessed someone put Apples in a potato salad. My German heart broke, bled and cried tears of devestation. I get it now
It's... Not even that uncommon in German cuisine..? It's just the Northern Germany variant, Germany is not just Bavaria. Just like Silesia, Bohemia and (North)Eastern Germany has potato salad with mayonnaise Vs the potato salad with vinegar dressing in Bavaria and Austria. Grüße aus Niedersachsen :D

Some of the people in the comments are saying that they invited these people to judge these dishes so if they don't like it then they're going to say bad things about it.....but they started criticizing food (except oui merci sweetheart) even before tasting and felt like they just came to hate Merle's food regardless of the taste.....there is a way to criticize food and Gordon Ramsay is more subtle than those two ladies

Pizza itself is tricky for Americans to do like Italians do, so respect to Merle from giving it a go. Neopolitan pizza is vegan apart from the cheese, but vegan commercial cheese and vegan cheese recipes are improving by leaps and bounds, so I trust that, in future, they will be super hard for even discerning Italian Mamas to tell apart from the real thing : )
