This easy, light and fluffy Italian ricotta cake recipe incorporates hundreds of delicious chocolate chips and absolutely no flour, making this cake naturally gluten free! I've provided a few flavor suggestions in the video, but I decided to add cinnamon and vanilla extract to make this ricotta cake taste similar to a cannoli! 3 eggs
150 grams (3/4 cup) granulated sugar
2.5 ml (1/2 tsp.) vanilla extract
1.5 grams (1/2 tsp.) ground cinnamon
100 grams (1/2 cup) mini chocolate chips (or regular chocolate chips, chopped chocolate chunks)
65 grams (1/2 cup) potato starch (or corn starch, corn flour)
a light dusting of powdered (icing) sugar
