You know what I loved about your video, you did everything quick, no long drawn out of cracking eggs, zesting the lemons, right to the point, and it looks delicious, I will be trying it !

I made this and it was wonderful. To dress up the cake a little, I made some candied lemons by using 1 to 1 ratio of water and sugar, brought that liquid to a boil and then added thinly sliced lemons and simmered until the lemons were translucent. Then I placed them on top of the cake. It looked amazing. A brilliant recipe. For those of you who have a 375 or 400g tub of ricotta, just use 4 eggs instead of 3. Worked beautifully. Thanks again for your recipe!

When I first made this cake, my husband was plunged back 60 years when his mother used to make ricotta cheesecake and it was nostalgic and it was a beautiful emotion you have made me a star in the kitchen. Thank you so much for sharing.

Recommendation- Write out the ingredients in ORDER that you use them when baking... 1. Egg yolks 2. Sugar etc. Makes for easier following the directions.

Since this is a no-flour recipe, it really lends itself to a Keto version simply by substituting the sugar with something like Allulouse or Swerve and using something in the place of the cornstarch. I'm thinking Xantham Gum might be the best substitute if you could figure out the amount. It requires far less than cornstarch when used as a thickener/binder.. If anyone knows how well it would work in place for this recipe I'd love to know.

I tried it, when I took it out of the oven the centre somewhat deflated (it was puffed up inside the oven). Is it normal? Anyway taste and texture were very good, really smooth, I will surely try to do it again. Thank you!

Giulia you are great! As you know I work with nurses who are gluttons… as one started to eat the cake right from the tray she couldn’t hold back… she ate 1/2 then took the rest home… piggy lol

I made the cake it was very good . But it seems a little low . I used 8 “ pan it’s was 1 inch high .was this the right height? In the video seemed higher .

I whip the egg whites at the end because the batter will wait but the whites can go flat. I just made it 😊

Thank you so much Olya. I hope you enjoyed it. Try to find a good quality ricotta and if it is too watery make sure to drain the excess water. I hope this helps :)

You can make your own! Use 4 cups whole milk 1/2 heavy cream and 2 tbsp white vinegar. Heat milk to 195f then mix in vinegar for 4 seconds. Leave for 10 minutes and strain.

Hi Betsy! Thank you for trying my recipe. My batter was pretty thick. Could it be that the ricotta you use was wetter then mine? If that is the case, it would be best to drain it a bit first. I hope this helps for next time. Let me know how it goes 😉

Hi, I am on my third week of Atkins and cannot use baking soda or potato starch. I have tried baking with both coconut and almond flour, but didn’t like the texture. I once made a cheesecake using Jelly. Do you think a sugar free jelly would work please?

Hi Helen. I didn't use baking soda or potato starch in this cake. You'll need cornstarch or arrowroot powder or rice flour. I don't suggest using Jelly for this cake. I hope this helps!

My springform pan is 10", which has about twice the area of a 7" pan, so I will double the recipe.

I followed the recipe step by step but my « dough » was much thinner-almost runny-after I incorporated the ricotta. What kind of ricotta was used in the recipe? Should it have drained first?

Hi! The ricotta I used was already drained. It's a good idea to drain the ricotta if it's more liquidity than the one I used in the video. The brand I used it's S. Lucia but it's the ricotta that comes in a packaging with no lid but covered with plastic wrap. I hope this helps :)

Thanks for your quick reply. Greatly appreciated. I’m not familiar with that brand of ricotta. Do you know where it might be available? There are ricottas at my grocery store that do come packaged the way you describe. I suppose I could try one of those. Thanks again.
