This Ricotta cake is amazing, Valentina. I'm surprised it doesn't have any flour in it. One of the best flour less cake I've seen. It's not dense but very fluffy. Awesome! ❤

@@HowTasty Ciao Valentina, I have lots of dairy farms around here but almost all the milk goes to Hershey chocolate company. No specialty farms or cheese makers. I haven't had Fresh made Mozzarella cheese in over 30yrs 😢😫. We have a store by me that has a good assortment of cheeses. That's where I got the Grana Padano cheese I showed you. Hello and welcome to my channel! Consider that lemon flavor is in the zest where are the essential oil, the juice is sour but less flavorfull, so to enhance lemon flavor you should add more lemon zest than juice. Hope this help you

Hi Claudio and welcome here! To get that fluffy texture, similar to a soufflé cloudy cake. If you bake it without waterbath, you’ll get a thicker texture.

No, it’s the opposite: eggs incorporate air more easily if at room temperature! And the whipped egg whites are more stable 😉
