I am so happy to see you taking off your ring to bake! I watch food network a lot and I am always frustrated when the chefs do not remove their rings and such before handling food, so thank you very much!!

I make these cookies, and they're wonderful. Even older people really like the softness of the cookie, it's soft and pillowy because of the fluffiness of the ricotta cheese, One thing I do when icing, I grab the cookie, turn it upside down, and rotate in a circular motion while dipping the cookie in the icing. It seems quicker Icing doesn't take long to do when this method is exercised. THUMBS UP!!!

This is just lovely. The background music is soft so as not to overpower Laura’s voice. Also, skipping ahead so the loud noise of the mixer is not overwhelming the scene. It’s the small stuff that counts. Thoroughly enjoyed the presentation and enthusiasm. Good job. Can’t wait to make these!

I made this recipe while substituting cinnamon for nutmeg. I used just powered sugar and milk for the glaze. The cookies turned out well and tasted good. If I were to make it again, I would add some vanilla with no cinnamon/nutmeg. I would also cut this recipe in half or quarter since it made an endless amount of cookies.

Angela, I viewed four videos for Ricotta cookies and I want you to know that yours is the most informative. I love your use of the pastry brush to add the glaze....genius. Also, I did not know that you could freeze the batter for later use. Thanks for that piece of advice. And the nutmeg....great addition for flavouring the cookies. Lastly, great video work...well done.

1 cup unsalted butter, softened at room temperature. 1¾ cups granulated sugar. 2 eggs. 15 ounces ricotta cheese. 1 tablespoon vanilla paste (or vanilla extract) 4 cups all-purpose flour. 1 teaspoon baking soda. 1 teaspoon baking powder. Notes: I now bake with a lot of Swerve (erythritol) to cut sugar. You can do that too. Use 2 cups confectioner's Swerve in place of sugar. 1 cup unsalted butter, softened at room temperature. 1¾ cups granulated sugar. 2 eggs. 15 ounces ricotta cheese. 1 tablespoon vanilla paste (or vanilla extract) 4 cups all-purpose flour. 1 teaspoon baking soda. 1 teaspoon baking powder. Butter is one cup or 8 ounces. Ricotta cheese at 15 ounces is not quite 2 cups. 1 3/4 cups.

Hi great video. Love your kitchen. You look good too. You said you put dough in the fridge. How long can dough be left in fridge before you use it? Also you mentioned it can be frozen. Great! But can you explain if you need to thoroughly need to defrost and then use? Do you need to mix it again??? How or what do you wrap it in to freeze? Thank you. Look forward to more recipes!!! Grazie🙏

In fridge up to three days. In freezer up to 3 months. Defrost. It doesn't take long. No need to mix again. Best way to freeze. Roll in balls. put on tray in freezer. Once frozen, put in plastic bag.

You could. Keep in mind that these are soft cookies, and I think that could take away from them. Try a few and see how you like it.

Its missing the lemon zest and its easier to dip in the glaze than brushing it on. If you use store bought ricotta, I would strain it but if fresh, I would not...

The basic recipe doesn’t have lemon zest. That’s personal taste. And this cookie is so versatile, you can add all kinds of flavors to it. I make a lemon glaze with the lemon zest, but I don’t put it in the dough.

I'm not sure how you can call these "not sweet" with 1.75 cups of sugar per 1 cup of butter?

They don't "taste as sweet" as some cookies do. You can always reduce sugar or use swerve. Now I'm baking a lot with swerve.

There is also almost a full pound of ricotta in there along with the butter... when you consider that the 1 3/4 cups of sugar doesn't seem as excessive.

They are not all that sweet. They have a biscuit texture. Just enough sweet to be addicting.
