Could you tell me why the flour burns when I make scallopini Admittedly I fry a few more slices of veal than you did. Should I use a different oil than the olive oil I use ?

Veal should of cooked a few minutes in the sauce, the difference would of been night and day.

It looked very quick cos he only made 3 pieces of veal try and fry 9 pieces the flour starts to burn in the oil . I had to clean the fry pan and fry lit in batches.

your sauce is not good, look how when you put it on your veal it runs of like water, its not thick it is too runny, needed more time to bind
