Can I suggest a few cloves of garlic ( absolutely essential with lamb! ) using lemon instead of vinegar, and some oregano with the herbs.

You only rest meat which is rare or medium to let the juices rest. Not well done meat.

Mate, you don't rest meat after a prolonged cooking time. Prime rib cooked medium rare, you would, to allow the meat to relax and redistribute the juices

I like lamb shoulder chops but don't recommend buying a whole shoulder blade Roast.Ended up removing over half pound of fat!Felt like I got screwed. ☹
