Good video and technique on the honing. Only thing is harder knives around 60 hrc or more actually doesnt need to be honed and can take damage on a steel hone. On thoose harder knives i would recomend stropping on leather for example. Or doing just a few quick strokes on a stone every now and then to maintain the apex/edge of the knife.

My mother used my henckel pairing knife to cut through a few plastic, as well as cardboard boxes. Edge was ruined and the majority of the blade itself is scratched up. Bought a few sharpening stones, took some time to learn, and the edge was good as new. Scratches remain in the body of the blade but eh, it still cuts like a dream.

I rather sharpen my knives with a diamond sharpening steel and for maintenance a oval honing steel. Works great to keep your knives in top shape!

Good question! It’s burnishing the edge of the knife and is made of steel harder than the knife itself, so probably a lifetime.
