No one clapped during the performance of Ode to Joy. After the performance they clapped. Unless the music is a kind of a march or a galop (like this one) then it's fine to clap. It's just not recommended to do it.

I have two major themes in instrumental playlists and I have uses for this music in both of them. For playlists which tell the story of what turned out to be the worst snake bite ever in the United States or Canada, I use it to represent the snake attack itself. For those which tell the story of former president Taft (who is a fascination to me), I use it to represent the story that he got stuck in a bathtub while he was president (although this may not be true).

I just want to point out that, because of the piece's strong association with the can-can dance, it's considered customary to clap during some performances of the piece, particularly when it is done as a standalone presentation and not part of the larger opera. In these contexts, the clapping is as much a part of the music as any of the instruments onstage. This isn't true for every performance of this piece, but that's how it's often done. It's probably more meta and postmodern than any of the performers here or elsewhere intend, but it's cool way of breaking down the traditional understanding of a concert and making the audience an active part of the music.

You are right. Here it is not sung, so it is the cancan version and the clapping and participation of the public is expected, and welcome. It is an instrument like the others, an important one. It would be inappropriate with the opera bouffe (sung) version but not with the orchestral or danced one. ( sometimes the public claps during the gallop in the opera bouffe version, though. It doesn't disturb the singers. The man who wrote Olalaye ou la reine des iles, la grande duchesse de Gérolstein and le roi carotte expected to entertain the public and make it laugh loudly, clap, like here or even dance. In le roi carotte he often breaks the 4th wall, the public is not a passive spectator, he is part of the show.
