Grunt is probably a genius. The way he talks when he leaves the tank and the way he talks & acts afterwards are signs of his (relative) immaturity and experimentation with his own identity. He picks the name "Grunt" because it's "meaningless," but he acts like a grunt when you see him later. He leads small teams in combat, he fights on the basic infantry level, he drinks & does stupid shit because it's fun to drink & do stupid shit...like a grunt. Also, I kind of wish that Grunt would've treated Shepard just a little (just a little) like his parent. It would've been funny as hell.

If you don't complete his loyalty mission in ME2 then actually does die in that scene. If he survives the Suicide Mission of course. If he dosen't then he gets replaced by a guy called Urdnot Dagg, who dies anyway regardless of your choices.

He's not even 5 years out of the tank, and his body is that of a Krogan equivalent to a 23 year old him at oldest. Most of his skill and knowledge were uploaded while he was in the tank. Boy's going to have some developmental issues unique to him.
