I'm thinking if your team has a good offensive line then Gibbs is the better choice, Bijan will get you yards with a mediocre line

Eye test alone I prefer Gibbs over Bijan. Gibbs just has that second gear in him that I just don’t see in Bijan, and as a cowboys fan Gibbs and Pollard in the backfield would be unstoppably fast
