Im at a fishing village learning new things about Jamaican Seafood such as how there Conger Eel is prepared. Many fishermen seemingly believe that the mucus that is found on the eel is poisonous. this makes for a unique way to prepare which has the eel buried for no less than 25 minuted under sand to remove the mucus so that it can be consumed.

Here in the Virgin Islands 🇻🇮 they would scrub the eel skin with sand to remove the slime before cleaning it. The fish you call “Long Jaw” we call “Saltwater Gar”. Some people would also call them “ Needle Fish”.

I'm an English viewer and really enjoy this channel. I'm not keen at all of what you call longjaw, we get them uk and call them Garfish, the green backbone and flaky almost tasteless meat puts me off! We get conger aswell, I LOVE that, it's nice simmered in milk with onions, a bay leaf, peppercorns and fish seasoning, beautiful meaty and tasty!!!

It's not a gar it's what's called Needle Fish and is plenty flavorful. Now gar is kind of tasteless

I remember fishing for long jaw when I was a kid. We usually cut our rubber slippers and make floats for the fish line with live "rock sucker" (fish) bait. They are really fun to catch as they give an exciting fight. I also salt and dry congrie then fry n eat. Never bury one. Seem i was lucky.

Awesome video! I always like to see how different cultures cook, clean and eat other types of seafood compared to the way I’m used to doing it…. I have to admit, the eel looked very good, the texture before and after cooked looked really good… I never knew about the toxins in the “green layer” on the eel that has to be scraped off…

After cleaning we use to make a brine using peppers, salt a bit of brown sugar, eskillion , ginger and some cane vinegar , let it sit for an hour or two . Then we would season it with some thyme , pimento, little salt and Black pepper wrapped in banana leaves and eat that with roast yams and butter. Some how I am beginning to think my mom did more than the average Jamaican mothers, because I often ask others if them know somethings that I use to eat and they often say no.

Neither of the two eels in this video are Conger eels, they are Moray eels that have the green slime. Yes Conger eels have slime but it's like clear jelly lol. Not particularly a nice fish to eat either. Those Garfish Aka "Longjaw" would be far nicer filleted, floured & fried in a mix of butter & oil. Where I come from there is so many of them they take the bait (sandeel) alot sometimes before the Mackerel get a chance.
