Great video! For this type of fishin' circle hooks actually are perfect, do set the hook still, the way you do it is fine and not too fast, but the circle gives you the advantage you can let them eat the bait without worries till they run away, use Mustard 39950, the 3x demon perfect circle in 9/0 and 10/0, bridle the bait and you will have even more success, also once a fish is hooked on the circle it hardly ever comes off. Normal bottom fishin' is one thing, handlin' at eye sight somethin' else and it's exactly where circles shine. I did lots of handlin' like that for eels, Catfish and turbot before, even trout, all at night with a headlamp. The eels needed smaller hooks and I kept most anyway, so I had a line with a J hook, one with a smaller circle and one with a bigger circle hook ready, for Catfish and turbot that were at least a foot I'd use 1/0-2/0 circles with great success and even more important, they all survived!!!

the cutlets should be 2" thick. Best simmered in water. Takes about 20 - 25 minutes. Check, its done when the skin comes off. The bone come out easily.

I fish in Dorset and we catch plenty of conger up to 20-30lbs. Never bothered to bring a big one into the boat as ive never fancy wrestling with it trying to dispatch it in the boat. Do you cut in behind their head to severe the back bone?

I've caught them when we fish for sea bass, they're strong fish.i caught then in like 200 ft water with a rod and reel. The way you do it looks much more fun and alot easier until you hook one. We caught dogfish on those trips to and the eels were stronger than the sharks for the most part.
