Im with Carlene who is Aunt May from Hellshire Beach daughter. We recently did a video at Aunt May's with Keisha who told me about her sister and the awesome stuff she was doing in Florida. 547 miles later and we're in Carlenes Kitchen for Aunt May's Fish Fry.
Cooking from the back of her house Carlene cooks an average of 150 fish 2 cases of chicken leg and thigh and goes through about two 16 qt. tubs of escovitch sauce. She's using Authentic Jamaican flavors she learned from her mother who handed down her skillful art of cooking to her daughters. They both have their individuals styles but they truly represent their mother's legacy really well.

Miss Carlene food taste like it cook itself in hellshire beach. Booked a flight and fly itself to ft. Lauderdale. She's the best. Hands down. We had hog snapper escoveitch delicious. My husband and child forgot about me. They had no friends. But their plates were wiped CLEAN. how the lobster, jerk pork and chicken tasted. The shrimp and festival was light as pillows and seasoned to the bone. Beautiful authentic Jamaican cuisine. We're blessed in fort Lauderdale.

Im surprised at the level of negative nitpicking comments here. We are jamaicans outside the island. We know when foos tastes exactly like home. And ms. Carlenes food is the best. I wouldnt trust any other woman outside my house to feed my family. But we need to show suport and more love for small business entrepreneurs in south florida instead of goingto the mass produced distant relation food shops that replace coconut milk in rice and peaswith plain white sugar. To keep costs down. Miss Carlenes cuisine is expertly executed. Clean and hygienically prepared. So please stop the negativity.

I agree, our corn tough and don't have nuh flavour. I no longer buy those, because Jamaicans are now growing the sweet softer corn and that's available at the market and supermarkets. It is a great contrast with the flavour profile, the sweet of the corn against the salty, spicy and other flavours of the soup
