when you are frying the chicken are you frying them until they are done? How done is the chicken when you pull it out out of the cooking oil; before you make your gravy?

It doesn't have to be completely cooked since it will be simmered in the sauce as well. Maybe 90-95% cooked depending on the size of the pieces. 🖤💚💛

What is the difference between that and stew chicken? You have no idea what fricassee chicken is sorry to tell you.

French Fricasse: The chicken would be FRIED in hot oil and simmered in a creamy sauce. Ja style Fricasse : Chicken is FRIED in hot oil then added to a gravy where Browning isn't usually used. Brown Stew: Chicken is BROWNED with the aid of burnt sugar or use of Browning for colour. Usually a darker brown colour than Fricasse.

She already told you the difference. (1) Stew chicken is only browned or blackened to a certain color and then remove from the pot. Chicken fricasee is much lighter in texture (this only requires a tablespoon of oil) (2) Jamaican Fricasee chicken is fried to a point there it is almost done before a gravy is made. (3) Stew chicken cooks and simmer in its own liquid for an hour, while Fricasee only cooks in its gravy for a much shorter time. (4) Since it a lot less liquid Jamaican Fricasee works best with very small cuts of chicken (5) Jamaican Fricase chicken has much more of a crunchy texture and taste then stew chicken which falls off the bone when cooked properly.
