@@lrowe70 I know about Brown Stew chicken; just never heard anyone Jamaican that I know call it fricasse chicken before watching Adrian's video. My mom (RIP) made Fricasse chicken but she never made it like the Jamaican Brown Stew chicken. It's so interesting to learn that no matter how different we all cook, turns out we're not so different at all lol. What's different are the spices and seasonings and a few techniques. Btw I'm not Jamaican; I just love the food, people and the cullture.

@@imari2305 there are 14 parishes in Jamaica. A Jamaican in St. Ann may know a dish such as brown Stew Chicken, while a Jamaican in another parish - St. Catherine as an example, may know the same dish as Fricassee chicken. It is the beauty of the Jamaican culture - out of many, one people. We are a blend of different cultures, hence the reason why Jamaicans may know a particular dish by a different name.

You a real chef. My part of the island. We do stew or brown stew. Stew we cook down one time. Brown stew we fry then stew. In montego bay I hear them call the stew down fricasse. Different ways still taste good

In essence the fricassee chicken is the same as Brown stewed chicken or we call it fry and cooked down ,its the same method and then you have stewed chicken where you put all in the hot oil and allow it to get a nice brown colour, then we add water little by little and let it steam.

Something I’ve always wondered about Jamaican fricassee chicken, why do we make a brown sauce? Everybody else in the world makes this based on the definition of the word which is to finish the meat in a white sauce. Looking forward to the input just curious. FYI, I love my Jamaican spin on recipes from all over the world so don’t get me wrong but in this case, the white sauce is quite delicious and I don’t know if people even know about it…

You did I wrong big man, fricassee chicken should definitely 100% be voted in Plentyflour before you brown it. That's what make the Chicken tender and different from brow stew chicken. it is common to wash chicken in Caribbean culture. The chicken we buy usually has a lot of blood dripping out of it. You do not want that blood in your your stew or any type of recipe your cooking. It is also most sanitary and washing chicken can remove dirt and all types of other foreign objects you cannot see with you eyes.

Small cut up is stew chicken, the bigger size is brown stew chicken, fricassee is not so brown ,the frying process is less , the chicken must be lighter in color on not so brow .

A no so fricassee Chicken 🐓 cook. You as-to flower the chicken before you fry it . The sauté the vegetables cook it Dow for around 10 Minuets then add the chicken and leave it to simmer for around 10 Minuets then it ready.please get you facts right before you lot do video and misleading the public ok.
