To be fair, I know you said you didn't have that many jars of sauce, yours is so condensed it's more like a strong puree, so you would need less in cooking?? Is that right? It looks jolly lovely sauce anyway!!! Can we see your jar mountain in the basement please xxx

Aboit freezing those tomatoes, a utuber you know froze a number of her tomatoes in oneuse, grocery store tee shirt and other larger bags; im thinking harvest season of '21 then used them summer-ish of '22 before a big move sometime. On utube, the tomatoes seemed to work fine. The tee shirt bags may not be as visually pretty nor as secure but they seem like less work and less costly. While there was a state law change to begin in 2020 requiring retailers to charge for one use grocery bags, the pandemic delayed enactment and the quality of the bags led to even more being used than ever before. "Every body" has a ton of them and simply mentioning about that you're running low often results in the offer of a bag of bags. If you want to go more sustainable, used pillow cases would probably work; they are great for all sorts of things and you can even open up a slit(s) in the hem to create a simgle or double string draw bag.

You might want to consider getting a rolling cart to save you steps when moving your jars from the canners to the island or table.. .instead of walking each jar individually. 😊I bet you have walked many a mile during your mega canning adventures. I’ve never heard you complain . You’re just always so positive and thankful about everything. God bless you. You are an inspiration to me ❤

A great sturdy cart is the Container Store Origami. It rolls like a dream has two lower shelves AND it folds up for storage. LOVE LOVE LOVE mine. I use it for canning and planting seeds.

I made a tomato preserve(library had recipe) used beefsteak tomatoes grown ourselves. I spent 3 days. Coz I had 3 batches. Put a pinch of sugar to your recipe paste. My project made 36 quart jars.

All I can say is thank goodness your baby daddy is an electrician! Anyone else would be blowing fuses/flipping breakers running that many alliances etc in a regular sized kitchen. I have been waiting for this video for months, so glad to finally see it.

☝🏻💁🏻‍♀️Certainly understandable...my husband is an engineer (commercial kitchens and bars...most restaurants you will recognize) and when we designed our kitchen he was very attentive to what I would be using and where so he could balance the electrical load for me👍🏻😊

I have a great tomato recipe(library find) you use beef steak tomatoes& parboil removes skins. It had a chunky substance~ it’s delicious! U use oranges & cloves to make this tomato chutney: I used 80 lbs tomatoes for 42 qt jars. I was working on it 72: hrs : 2 days vacation. As it’s very long process.

I appreciate you showing the ACTUAL process with the mess and detours included. Most cooking platforms show the pageantry of it all without the deviations and moments of worry. You are awesome!

Jamerill, I love to use my tomato juice instead of water to make rice, and sometimes I add green peppers and onions to make a Spanish take on it. But the tamato juice makes for awesome rice.

Another option when canning tomato sauce or salsa ~ rather than pulling off so much juice, I add tomato paste to thicken. That way I am not overwhelmed with tons of tomato juice and feel like I have more salsa, sauce etc. I enjoy watching you work in your mega kitchen!

That makes a lot of sense. I can use tomato juice for rice, soups, etc, but I don't much care for drinking it, and I NEED tomato sauce. For all those tomatoes, the proportion of sauce to juice seemed way too high on the juice side for my needs. And you can get the #10 size cans of tomato paste at Chef's Store for only $10.35 -- almost 7 lbs of tomato paste or the equivalent of 18.5 of the 6 oz cans.

I dehydrate the skins etc and powder and use that for paste to thicken 😊

I wonder, do you ever wake up from a night of processing like that to a spotless kitchen? I sure hope you're family treats you, baby, you deserve it! I am literally half your age, no kids, and could not imagine doing this work load by myself! You are a superhero, Rockstar, ROLE MODEL!!!!! I am dreaming of the day I can do this, just like you did! Jamerill, I’m going to suggest you follow Sarah’s suggestion to core the stem out of your tomatoes before you start the cooking process. Leaving the stems can introduce dirt etc to your sauce as well as a bitter flavour. You can put them through the mill before cooking if you thaw them out first too

For future canning adventures…if you put your cold lemon juice in your hot jar that can lead to a break, put your hot product in and leave room for your lemon juice. I was having some breaks years ago and was taught by a friend. Haven’t had a break since🤞🏼 Happy Canning! Your sauce looks so thick and rich! Lovely 😊

Jamerill, to save time and steps, you should leave all your jars on the cookie sheet, filling them all, then clean them all off, lid them then load then. That way they are always on a stable surface as well.

"WooHoo 2 whole hours to spend with Jamerill!" is what I was thinking when I saw you posted. Lady you sure made us work on this video, I'm ready for bed already! 🤣 It's funny because as you were adding more and more tomatoes to the roasters I was saying out loud NO WAIT they will overflow with liquid as if you could hear me. My kids had a laugh that I was talking away to you. I don't know where you get your energy but you did a fantastic job as usual. ❣🌹

I was so inspired by this video. I had 4 gallon size freezer bags from a part of our tomato harvest this year. I cooked them down to make tomato sauce and jarred up the juice as well! 4 quarts of beautiful tomato juice and 5 pints of beautiful tomato sauce! I’m super excited for this fall and winter to get to use these. We’re a f as milt of 3, our adult daughter lives at home with us and we are homesteaders. This was my first attempt at canning tomato sauce and juice. Earlier I canned diced tomatoes!

Hi Jamerill in Italy we do our pasta sauce outside in a huge massive stockpot, like this it cooks all the tomato at one time. If you decide to keep making tomato sauce you could try to see if it’s something you could invest in. And we use another huge stock pot to heat and then boil the jars it’s very time effective. I love your videos.😊

I'm sure you've heard this, but for tomato and grape juice I'll boil them down to a concentrate. They're the two that seem to work well when adding water and it saved me a ton of canning space. You're just amazing!

Jamerille you can use the tomato juice with all the water in it to extend stock/broth when canning soups and stews, boil pasta/ ravioli in it or even extend a casserole with it- so it's worth canning with all the water.

I love putting up tomatoes. Can do so much with them. ❤️ Canning them is awesome, but...I LOVE freeze drying them! Depending on the amount of water for re-constituting then you can use for tomatoes sauce, paste, spaghetti sauce, tomatoes soup, etc...

What a marathon canning session! Really enjoyed your video, 1st time viewer, new sub! My sister has a 500 acre farm and 11 children, 8 adopted and she home schools too, besides Angus beef, chickens, ducks, turkey, few horses, lol. They plant/ harvest alfalfa, corn, soybeans, hay, etc. She has broken her back 3 times but keeps on truckin! Her Dr said she is doing so well due to hauling 50lb bags of feed around! I Just started my first garden and got first canner at age 62! I was a RN for 37yrs but now disabled from a severe patient assault that nearly killed me. I'm now thriving thru the pain and try not to let it stop me because I have a precious 10yo grandson who needs me! Appreciate you and your channel! I understand the needing to rest and stretch your back, I have to as well as sitting against my heating pad! I have dry needling once/ week at physical therapy that has helped me be so much more active and less painful. Take care!

I’m only about halfway in and wanted to say I agree your hair looks adorable. I’m sure I’ll have other notes as I keep watchful. Perfect timing as I was doing some food prep in the kitchen. Roasted vegetables. And also gluten free noodles and roast with peppers I canned this summer. We do the same thing with large projects. Every January we make out hope and dreams list for that year and the following few years and make approximate costs. From there we prioritize and save. I would rather wait years for a project and save and not have the monthly debt. Side note. Agreed. If you find a great deal on produce that looks beautiful I would purchase too. I just can’t always grow everything and that’s 👍🏻

I just puree whole tomatoes in the blender and then cook them. Add salt and sugar for preserving. Until foam is gone or take off foam. One coworker told me about blending once, oh my good, my life got so much better. Now I do regular batches when I bring them from garden. And nutrients stay in also. Recommend 10/10

Yes, saving up in advance instead of going to get loans for projects makes things take longer but keeps us mostly debt-free. Slow and steady 💗

You need a cart to transport those jars (etc.) from stove to table (etc.) so that you don't have to make a "million" trips carrying each individual jar from stove to table. You are amazing. Love your videos.

This was the first time I see your show and it was simply amazing I'm 62 years old I'm just learning to can I didn't know that you can water bath tomatoes I don't have a pressure cooker but I do have a water bath and I'm growing tomato so I'm very excited thank you

I have a Victoria strainer,non electric, that really helped with large batches of tomatoes, a life saver, much like the one you have. Yours looks much more heavy duty. Loved this video.

I am 43 and I wear the heck out of hair clips. I still love the glitzy ones from Claire's. Beautiful, sturdy and really good grippers. Most have a small set of nibs inside that help hold your hair.

When transporting hot jars I line a pan that has a handle with a towel. That way you can carry a few at a time. Safety too just in case one would break. Another hint if you have a breeze in the kitchen, cover the hot jars with a towel as they cool to prevent a jar from breaking or sealing too quickly which could cause a false seal.

I love the way you talk to your kids when they are in your videos or ask questions you don’t yell at them or like shoo them away when your doing a video I always here them talking in the background or laughing or screaming I love it some parents shoo there kids away or don’t let them get a word in you talk to them kindly and sweet your a good mama ❤❤

We used to do salsa, pizza sauce, chilli sauce and stewed tomatoes, tomato soup, pasta sauce... Tomatoes are wonderful!!! 🍅🍅🍅🍅🍅. Great job done on processing and canning your tomatoes!!!

I used 3 varieties of paste tomatoes. I cord them cut the bad spots out put them in gallon bags in the freezer. When I saw them out I drained the liquid put the rest in a blender skin and all that's what I used to make my chili bass and spaghetti sauce it makes much more then juicing out and getting rid of the skin

Me too, I said out loud, where in the world did she get all of those peaches, lol, you have inspired me to big do batch cooking, only one thing, it’s just me and my Grandson, so we eat the same meal 3 to 4 days and have plenty to freeze and give away. Looking into getting a canner, jars and all the things because my 3 freezers in my little 2 bedroom apartment are overflowing.

With just 2and small space, you might want to try some of the freeze dried casseroles from augason farms, or the other companies. They are handy for me, don't have to refrigerate, or freeze, while in the can. You could just 1-2 servings each and could be really cheaper and easier than buying all the things to can with, then find a place to store when not in use.

We have always used the Victorio strainer hand crank ,but the tomatoes needed to be fresh since they go to water after frozen a good amount . In part it depends on the tomato used Roma tomatoes have less water making a thicker product . Once stood a wood spoon in the center of a large blue canner and it stayed there.

When I made tomatoe chutney it taste more like a strawberry flavor ! It has orange peelings cut in stripy& cloves added. That her we grew beef steak tomatoes.

grgrpapa had a huge galvinized tub and set it over a fire pit outside, he did close to 500 lbs at harvest time, it took all day but that ketchup was the best ever, we did a cook out to keep him company whie he cooked, he lived to b 92. he never had any food from a grocery store. all home made food,

Freeze dry or dehydrate all your peeling and seeds from. Your tomatoes they make a wonderful tomato powder

Words can't even express how much I enjoyed 2 hrs of Jamerrill while I did my household work today. Couple things.....LOVE your hair. All I could think about with the tomato juice is how much soup I could make with that.....and stretching your back on the floor. What a great idea!

I watched That 1870’’s Homestead & Rachel freeze dried the skins and made tomato powder. I tried it last year & loved getting so much use out of my harvest! Sauce, juice & powder.
