Friends, we're really doing massive food preservation today! In a 20-hour massive food preservation undertaking (and it was so cute when I started at 11 a.m. and said I'd be done "sensibly by 9 or 10 pm" 😂) together we can 200 lbs of healthy for my family of 11! We preserve 100 pounds of homegrown grass-fed beef including ground beef and beef stew meat. We also home can 100 pounds of locally grown potatoes that I bought for an amazing local deal! How long does it take for the pressure to go down in that huge “all American” canner? How do you keep it looking so new. My dear husband bought my one and only pressure canner 50 years ago when I first started canning at age 19. Still using the same canner a Mirro, I have gone through a few gaskets, but none worse for the wear. That big one you have is nice but at my stage in life I only can for my grandkids to take to college, and back to the navy after leave. But my navy grandson is getting married in a few months and might not need his jars of dinner. Well just curious about that depressurizing (if that is a word) that huge canner.

I worked at a university cooking so big meals is what I did. Your kitchen is missing one thing... A three tier rolling cart. Put your roaster with hot jars on it . Less steps. Also use serving trays to prep your lids and rings. You can stack them and keep under roaster on middle shelf of cart. You will wonder how you ever lived without it! Make sure detentions of cart will support size of your roasters.

Wow Jammerell, I now now how crazy it was when my husband and I caught a deal at a local butcher and bought 200 lbs of ground chuck last March for 1.90 a lbs and realized it wouldn't fit in my freezer so I turned in Mrs. Heart and watched how to Can it! 18 hrs.... 1 pressure canner, and thank God my husband was so helpful. You are amazing. That is a feet and your future self will thank you!. BTW, I watched homesteadheart because my very first time canning I got Stuck, emailed her and she called me to help me out, wonderful lady! And she I is the reason I purchased 550 jars, and a all american, and a presto. You Rock KZbin ladies! And Mrs Becky too. Gotta love that she walked me threw garlic season lol.

Brings back memories of my childhood.❤️ We went to bed with the sounds of the jiggler going. My momma would have two canners going and 80-100 jars of goodness with each canning session. I still have these canners and a lot of her jars. Her canning started following a trip to the orchard to pick fruit or out to the wild to pick huckleberries or to the garden to pick produce. Lots of work but my best memories.

Hi Jamerrill, please note that the temperatures need to be similar for everything. If the meat is cold, the jars should be cold and the water in the canner, too. If the food is hot, then the jars and water should also be hot. Reason: If the water starts out hot, the canner comes to temperature must faster than when it starts out cold. The problem with that is that the core temperature of the meat doesn't reach the correct temperature long enough. For example, the canner is under pressure for the correct amount of time, but the cold meat didn't have enough time to warm up. In short: match the temperatures of everything that goes in the canner. (Some people think it is just to avoid jar breakage, but that's just an added bonus.) Feel free to contact me for any further questions. 💗

I love how unflappable you are. When there is a problem (broken jar, etc.) you just deal with it and keep on going. That is the hallmark of a true Mega Mama.

This is a breath of fresh air...I love seeing you no makeup hair scarf on which is funny because mostly women of color wrap their hair, in a robe, coffee drinking and working hard for the family..in the raw.Not putting on for the camera showing real life..I appreciate you being so open. I've only got my husband, myself, and two roommates, but I can for all of us. Found 100 pounds of chicken legs quarters that I'll be jarring up this weekend, and my Azure order came yesterday, including 50 lbs of potatoes and 25 lbs of beets. I have two days to get that done. And I really need to make bread on top of it, cross your fingers for me. 😆☺️. What a great sense of accomplishment, Jammerill! Well done, lady❤️❤️ For the rug, maybe start with a layer of paper with some baking soda on it to suck up and additional oil. I'd set it up on both sides and then see if you can use some dawn soap to work that area. It always removes oil so well, I imagine that would cut it. You might have to do it a couple times. When momma is away, my kids found the strawberry syrup and decided to dump it on my rug once, and then walked through it all across the carpet. Oh my, the feet prints were adorable, but it took some work to remove pink from beige.... Been there 😆😂

Hey jamerril you can take it to a dry cleaners and they can take it out of there for you I had olive oil spilled all over my sweater jeans and area rug and they got it all out hope it helps ❤

Hi Jamerrill, I use kitchen twine to tie my weight to the top of my canning lid. I poke it through the 5 lb weight hole and attach to the handle. I have started doing this because I have misplaced it so many times. My altitude never calls for 5 lb anyway and the kitchen twine is light enough not to affect the air release. Also, 941 wow!

Wow!!! While I watched this video I meal prepped BBQs, made some oatmeal raisin walnut cookies and cleaned the kitchen including the dishes. Thanks for keeping me company! ❤

One thing I've learned, is when doing the potatoes, you can put them in cold water for about 15 min, twice, and then just put them in jars with water, or broth, what ever you want to put in with them, and just cook them at the recommended times. You don't have to blanch them first. Saves so MUCH time that way. . :) Just a thought for you, since you are doing so many :) GREAT video!

Hi Jamerrill! Try pressure washing your rug! First use baking soda and let it sit to soak up as much oil as it can. Use a shop vac to remove baking soda and then use Folex and a pressure washer. You’ll need to adjust the pressure so that you don’t fray the rug but I’ve done it before and it turns out beautifully! It’s certainly worth a try! 😊

I live alone but I put a lot of you tips and tricks to work each month. I have weeks of prepped and cooked meals in my freezer. At least once per week I cook up several meals at a time. Not only do I have more free time but I save money as well as eat more nutritionally. It's a win win win . Thank you so much.💪🙏♥️🐝

I had a Presto canner staring at me for 18 months 😮. I was so afraid to try it. Water bath canning was easy. Pressure canning a whole different beast. In August/September 2019 I saw what was happening to the banks. I told my husband that it was hand writing on the wall. I opened the box and it suggested canning water. I did. I was shocked how easy it was and couldn’t understand why I was so fearful. I canned meats, veggies, corn relish (can’t get that in the store), even canned banana nut bread. About Thanksgiving time I slacked off. Harvest time was over, holidays, etc. Six months later the world shut down. March 2020 I went in full time mode and canned everything I bought on sale. Unfortunately supply issues are still going on and 2023 is predicted to be bad. My pantry has plenty, even for friends and family who refuse to see handwriting on the wall. I now have good clean nutritious food on my shelves. I’ve learned where I can buy food in bulk, at farmer’s markets, local farms, etc and save LOTS of money. Amazon has sales from time to time on the Presto 23 quart canner. I went to garage sales, estate sales, auctions, Facebook marketplace, sales at Target, Walmart, etc. for jars. Don’t be overwhelmed. Just take the first step. Slow and steady. You got this. Tell family your saving to buy these things and any monies will go towards this goal. You’d be surprised how many will help. Good luck! ❤

Chalk works amazing on grease stains! I’m a wife of a oilfield worker/ farmer and this has saved his clothes so many times.

I have a commercial range and can run 5 canners at a time. ( I give each canner a number and write it on a sticky note on the counter. Then I have 5 wind up timers that I set -- one for each canner. I write the times on the sticky notes for the different steps of the process. This helps me keep track of what is going on when and where especially when I'm doing 4 or 5 different items. I could never do it in my head.

Wow, what a huge, impressive undertaking; and what a fantastic kitchen!!! I’m 72 years old and just started pressure canning a few months ago, and now regret not having learned how to do this many years ago, though I’ve never had the organizational skills needed to take on such a massive canning project as you have. Still, your video has inspired me to clear out some space to make room for more canned meats and vegetables, so thank you for that!

I have a suggestion: Buy a couple of plastic sprayer bottles ( found mine in the travel items section at Walmart for $.98), and fill with half water and half Dawn dish soap. Keep out and spray all the dishes for washing as you go. That way you don't have to pick up that big bottle of Dawn, and it also stretches your dish soap. It's wonderful, really.

when the weather breaks, take your rug outside. Wet it down, squirt with dawn dish liquid. Give a gentle scrub with a new scrub brush and then hit it with the hose to rinse it good. Let dry in the sun. should be as good as new Great job with all the canning. That is amazing

My daughter and I will be losing the bulk of our income in May and I so wish I had a canner!! But just cannot afford a pressure or water canner. My mama taught me how and when I raised my own garden we had a beautiful storage. But the last 8 years has taken a bite out of me and this life. You have done an awesome job and only 1 jar lost!! The oil on the rug: as a chef we are treating oil stains quite a bit, I’ve always had the best luck spot treating with dawn dish soap it really does work incredible in oil/degreasing. I would take it outside lightly cover the oil spot with dawn and let sit fir an hour or two and then work it into the fabric like kinda scrubbing it and then rinse well, maybe with a hose for the extra water pressure. You may need to do the process again depending. If you spill oil on the floor dump salt all over it liberally to cover, let it sit and then sweep up and then clean the floor with a mop/floor cleaner or even the dawn soap. Let me know how it goes ❤

Was going to suggest dawn dishsoap for the oil as well. Since it was an entire bottle, you may want to soak up as much as possible with paper towels first, then do the dishsoap.

Hello Jamerrill, Girl you be gettin it in. I would love to see you get a stainless steel cart on rollers to aide you in safety in the kitchen. Along with saving you some steps. It will really save your back too. That's what we use in commercial kitchens dealing with those hefty quantities to transport food and equipment. Just something to consider. About the rug, dilute Dawn dish soap about 50/50 with water, saturate the oil spot and let sit for an hour then wash. I use a mixture of about 25% Dawn to water in a spray bottle for any laundry stain and it's especially handy on collars.

Oh my gosh! Keeping the jars warm in the roaster ovens... LOVE IT stealing that idea when I can next. Also, we have started cutting potatoes into thicker French fry cuts and canning them, then we pop them in the air fryer when we open a jar and have fantastic fries!

When you make them for French fries do you boil them first or do you just raw pack them and add boiling water to them? I’ve never canned before and am just learning but I’m intrigued and think this would be awesome to have them ready for the air fryer just not exactly sure how you would can them. I never knew you could can all these things until I found such hard working ladies on here. You deserve a Standing Ovation for a Hour . I Truly Don't Know How You Do So Much . I wish I could just figure out how to handle every day things without my brain screaming. I never had anyone show me how to do any of these things. My momma never had that either so bless her she couldn't show me but boy could she cook. I Miss My Momma so Much 😢❤

We installed the exact same tiles in our bathroom that you used for your backsplash. In fact they were even installed right around the same time. We too have been very pleased with how they are working out!

Massive canning job👏👏👏👏 I also purchased the big 41 qt All American for myself for Christmas and I love it. It gets the job done and quick. I did a huge broth canning job and put 21 qts in. It depends on your jars, regular rounds and square shape is what I canned broth in. Some of my jars always touch and I have never had a jar break from touching. Happy canning👍

I didn’t can much this past year. Watching you kind of makes me want to get moving! We’ve ordered a quarter side of beef, (our second), so that will get me motivated when it gets here. (Fall) You work too hard! I hope you have something fun to do on your down time. 🤗 Dawn dish liquid may take the olive oil out of your rug. Take it to a car wash and hang it there.

I did just finishing canning 21 quarts of beef broth(actually I am technically not done with the last batch. Just had to stop to put a cottage pie together with my son so as soon as I can clean my stove top the last set goes in. You are my inspiration for the bone broth!

Jamerill, 18 or 19 quarts in the canner might depend on whether you're using wide or regular mouth jars. I've found in my All American canner, the number of jars depend on this. But,, just like you, I'd rather not overcrowd my canner and thus have everything can evenly. Boy you sure did tackle a huge project on this day! Way to go to get it done!!

Always love your videos! I raw pack both my potatoes and my stew meat. Speeds the process up. I don't like mushy potatoes. Also I use these potatoes to make potato salad. You are a mega momma. I am sure I would be overwhelmed to operate at your level. Enjoy the fruits of your hard work!

Thanks for this comment I was wondering why she was cooking the potatoes first? Have you raw packed ground beef as well or is that just chunks of meat? I’m new to canning and am just trying to learn as much as I can. I want to be able to can food for my daughters family so they will have nutritious and delicious convenient meals without having to rely on everything from the grocery store that is in boxes and in the freezer aisle. Even there they have long lists of ingredients with names I can pronounce and I don’t think they should be ingested by humans. Anyway I just want to help them be as healthy as possible. I have taken in a freezing feral black kitten in the rain who has been named Gideon...Although sick, he has been beautifully rehabbed and is obsessed with food, having had little and also cooking. He loves you tube, and especially enjoys watching you cook, as he does me, and cries at the stove when he knows it is cooking time. So he especially loved this caning episode featuring his favorite groceries being cooked (he's a potato and meat guy...plus he gets canned food). He reached out at your spoon and tried to grab a piece of potato...then ran to the table to where i put the plate thinking dinner was coming for us.....what a guy!

After canning that stew meat, it makes the best BBQs ever. Drain the juice and save that, then quickly warm the meat in a skillet with your favorite BBQ sauce and seasoning. Greatest sandwiches ever! We do it with deer all the time 🥰

Hi Jemerill I usually pour talcum powder on oil spots it forms a bit of a crust as it soaks up the oil, then I wash it and usually the stain dissappear. I have never done anything as big as your carpet. If you want try it, good luck. I would vacuum up the talc the next day and then wash it with a carpet wash.

Typically when you cold pack jars, you start with cold jars. That would save the set up/process for keeping jars warm. You just need to start with a cold canner and water if you have cold jars and products. I have learned how to actually cold pack beef stew in jars (meat, potatoes, carrots, seasoning). It turned out great! We just make a couple packets of brown gravy, throw the stew starter in, and have a meal in 20 minutes! Love your channel! ❤

I considered it hot packing (although not 🤣) because I was putting the beef stew jars in a canner that was already heated up because the ground beef was hot packed. At least it all worked out because none of those jars broke. Love the beef stew idea! I did homemade mashed potatoes and homemade beef stroganoff in the slow cooker this week with some of these home canned goodies. 🤗🤗🤗

I also cold pack beef stew, lamb and pork too. I put apple, onion and celery with pork. I put a dry mix morrocan spices with some lamb, others with traditional English "hot pot" stew. It is so easy and safes so much time prepping to get it in the canner.

When you empty or adjust water levels in that heavy pot, a battery powered transfer pump could help with the heavy lifting. Harbor Freight has an inexpensive one and there may be other makers. Happy canning to you.

Suggestion for the carpet. Sprinkle a generous layer of salt over the oil. Let it sit for an hour or so. The salt will absorb the oil. Then vacuum it up and I would use a carpet cleaner over it. Even a little green machine should do the trick. I worked in an Italian restaurant for years and this is how we cleaned olive oil spills.

Jamerille, when I can potatoes I DON’T precook them. I cold pack them and they very well done. Have used many jars for mashed potatoes. In fact, I hope yours are not too well done when you go to use them. That would save you a complete step

Jamerrill, I have back issues like you and wanted to share a helpful hint. You need a step that levels out your shoulder to fill the tall pots. Instead of rotating your shoulder and stretching to reach inside the pot, try a step stool, you will notice a big change in your back strain

A shop cart that has a solid top surface and one below could be useful for transferring hot canned items on for transport to the island or any other location. It could save steps and can be a temporary resting place for the canned items. Can help with safety when moving hot canned jars. Love your show and I learn a lot from you. God Bless.

Loved your video J ❤ On the days I am canning, I start at 4:00 AM and I’m usually done by 6:00 but, I have gone as late as 8:00ish PM 14 to 16 hours of canning. I’ve never done a 24 hour canning day Oh My that’s very impressive 👏🏻

Very inspiring to see you get so much canning done and to see all the homemade goods on the shelves! As a mom of so many, hope you prioritize getting enough rest. Your health matters to so many. Please don't push with overnight canning. Does your friend get a few jars of potatoes for her trouble or do you just return the favor when she needs to do a large canning job? Is it true these will be good for 3 years now? Thanks for showing us how so many things can be canned. Look forward to seeing the tomato adventures.

I have been wanting to learn to can and learn to do water baths. Thank you for these nice long videos about canning. I think, finally, after more than a decade of wanting to learn I have the confidence to try. Now I just have to go buy all the stuff to start.

I’m like you! I want to give it a try but the cost of everything up front and I’m sooo worried about messing up and have something explode! But the feeling of having wholesome prepped food in cans would be such an incredible blessing and I know it would be something my extended family would benefit from greatly. I just have to get up the nerve and the $$$ to start.

Hi Jamerrill I learned that blanching the potatoes are done differently than when we blanch other veg. For potatoes you start with cold water. Put your potatoes in the pot, add water to cover them. Use high heat to bring water up to a boil and then immediately simmer for 2 min and done! If you are blanching larger sized (like a whole small potato) they say 10 min on simmer. I found it much faster and easier when I did this and my potatoes were not mush at the end. You are a true canning trooper!!

Try dawn dish soap on your rug. It cuts grease and oil in dish washing. And they use it on fowl when there's an oil spill in the ocean or lake. I'm amazed at the poundage you canned in 1 day! I have ADD and I usually can't watch anything over 30 minutes, but I watched your entire vlog. Love your channel.

For the rug, if your able to hose it or soak it then try:: putting straight blue dawn dish soap on it, while dry, and a sprinkle of oxiclean, get a soft scrub brush and scrub., do both side, then try hosing it off, or soaking in tub….. also could try dishwasher detergent- that also I great at cutting through grease/oils…

Use your Dawn dish soap like for dishes it's great on oil stains on clothes or your rug warm soapy Dawn place towel under rug to help absorb water let air dry repeat if needed don't use a scrub brush for itay change fibers construction use a rag to rub suds around. Good luck

Jamerrill, awesome job! From someone who experienced their very first earthquake in 2020, I didn't even have to think about my canning jars (hundreds) being affected because they are stored in boxes from Costco sitting on the shelves. I love quarts to be in PB or honey boxes then they aren't too heavy to carry with only 6. Raspberry boxes are also good ones for pints. I was watching what has been happening on earthquakes and noticed virginia has one on the border just a couple days ago. I immediately thought of you. Now after watching this and seeing that your jars are "just sitting on the shelf" and not in boxes... think and ponder on that one. May want to hit up costco for a few free boxes. Happy to see you getting into more canning. Oh.. when I stuff my canner, I let my jars touch. That hasn't hurt a thing. ;)

I never thought to sterilize my jars in my roasters. I absolutely love the Mama ideas you come up with. I have 6 big roasters and every size crockpot , they are all used at times. I had 4 mismatched roasters but bought 2 new for my daughter’s upcoming wedding & wanted them to match. I’m sure I will have them all going at once eventually. Now I’m just rambling, lol.
