Joel, just a story for you. The Manchu kings, in particular Qian Long used to secretly wander their dynasties. On one occasion, a commoner did something worthy of respect for the incognito emperor in Southern China. Of course the emperor does not bow to anyone but the heavens so he tapped on the table twice as a Thank You. It is now a common, polite practice to tap twice asa thank you, specially in a restaurant atmosphere where originally the emperor tapped…..

sour in cantonese food is intentional..... if there's unintentional sourness then we consider the food as off and expired.... that's why for sour food, there's mostly written on the name.... sweet and sour pork, salty and sour vegetables..... or you add vinegar into your food... like wonton soup.

you need to try the famous fresh beef hot pot (Chaoshan Beef Hotpot). Cow is slaughtered and served without going to chilling process in a day.
