Uncle Roger is funny, but I LOVE getting a reaction from an actual Japanese person. You two are also very funny, while giving a real, authentic reaction to your cultures dish. What is more ridiculous is that it really is just his lazy ignorance. I cooked professionally for over 20 years and Ramen broth is dead easy to make....a long process same as Cha Shu pork(made the day before) but not difficult. I no longer work in the industry as I chose my family first but as a single parent of 4 (working full time) I still make the complete dish at home.

Bruh...the first time I tried making authentic ramen, my brother and I drove around the city trying to find pig feet for the broth for an hour (peak covid), sawed through them with a saw not made for bones and then boiled them overnight. Jamie Oliver's recipe isn't even close

Roasting the bones: this is a classic French cooking technique in making dark stock, which infuses a deeper flavor to stock and, when it's veal bones, a richer demi glace or espagnole Mother Sauce. ...and since neither of these has any relationship whatsoever to ramen broth or tare, all Asian's general confusion & outrage here is warranted :) It can't even be called fusion food.

The last time I was in Osaka, there was this wonderful ramen shop near our apartment. Their charshu was oven roasted, and it had this wonderful char on the outside of each slice. It was the best I have ever eaten. I do not know if it is still there, but it was just east of Morinomiya Station on Chuo-dori Ave.

5:39 "No roasting, just boil". Actually roasting bones prior making broth is quite common. It is a French technique. Classicaly trained chefs are taught this method. Roasting the bones causes the Malliard reaction. It is a reaction that happens when the dry heat coverts the amino acids into sugar. In lay term it is called browning. The brown crystalized sugar produces deep flavor and dark stock.

Making "Ramen" with Soba Noodles is the same like making Spagethi Napoli with Farfalle-noodles. There are so many forms and types of noodles. And a cook should know the difference. But how Jamie Oliver makes Asien Cousine makes me believe that he either hates it or just doesn't care at all. So sad.

Of all cuisines other my country, I love Japanese of all time and Italian next... Damn it... Damn it sooo much. I studied cooking and hunted authentic Japanese restaurants as much as I can. Oh by the way. The way Jamie roasted the bones first then added water, IS a way of making stock so i give thumbs-up for that.. Yeah but he still fucked up in the end 🤣

According to chef Brian tsao, roasting the bones isn't completely out of the question because it adds flavor. Very different from classical ramen but still probably delicious. Boiling pork belly in the broth was wrong, but whatever. The biggest offense was adding sesame oil and miso to the pot before boiling everything. The oil and miso would be broken down by the heat and lose flavor.

It's not like ramen noodles are hard to get in UK. Most stores have it near the rice and pasta. And if they don't, there's at least some instant ramen around. Soba is quite hard to get though, so he had to go out of his way to mess this up!

6:37 Had to laugh because of your facial expressions. Jamie had in fact not added any water until that point. He dry roasted the bones which is a classic method to release more flavour from them. The roasting he did in a pizza oven that he has in that camper but that oven gets way too hot to make a broth so after adding the water he sat the pan next to an open fire (so not directly over it). I hadn't heard of soba before, but when I looked it up I had an instant Oh moment as it stated that `unlike ramen noodles, which often contain oils, fat and salt, soba noodles calories are very low in fat and cholesterol, provide healthy carbs and give you protein`. Jamie is a health freak and so he'll always try to `improve` recipes. Honestly I can't say I fully disapprove, as it shows you can make changes to a recipe to suit your own taste or even needs and in fact his version of ramen will allow a person with gluten allergy (celiac disease) to eat it. I think that's pretty smart but he should have explained it rather than make it look like that's the way it should be done.

I get it but sometimes it just doesn't work. Just like his oil/fat free curry. Make a soup if you wanna avoid oil and fat. Soba noodle is slippery, (almost a little plastic-like) like some thicker glass noodles, it does not pick up any flavour from the soup that's why we usually use it for cold noodles. Actually Asians are the most health conscious eaters on the planet, you can find a lot of delicious and healthy Asian recipes without butchering them. If he wants to go for gluten free Japanese recipe it is very very easy to find one without being disrespectful.

There are two issues with replacing the noodles for ramen. 1. The damn noodles are what make it ramen. Soba is an entirely different noodle; he's not making ramen because ramen IS the noodle. 2. The soup bases are completely different because the noodles are made very differently. Ramen is a high alkaline wheat noodle which has a different flavor and absorbs different flavors from the broth than the buckwheat noodles that are soba. Meaning the soup you put it in have a different flavor effect on the noodles. So adding soba to the oily, high fat broth doesn't work because of its slippery nature.

chashu i think its referring to pork belly specifically. Char Siew 叉烧 however originate from Cantonese chinese, its a roasted fatty pork covered in sweet sauce

They are certainly related, but evolved into two different things. A lot of Chinese food recipes spread to Japan only in text form, not the actual food. And the Japanese basically made their own version of those based on their own interpretation of texts describing how they are made. So you have something like Chashu which etymologically derived from Char Siu, but ended up becoming two different things. These kind of things are actually very common in a lot of cultures neighboring each other.

Is there a name for - Boil a cheap ramen brik, drain all but couple spoonful water, add seasoning pack & spices, off heat mix in an egg to make a thick sauce, coating noodles instead of broth ? A bit like a yakisoba, but cheap brik ramen not Soba noodles. Is YakiRamen actual classic dish, or 'so random' ?

When you use soup bones you roast them to help get the marrow out. He's not using bones though, he is using the whole cuts of meat so he doesn't have to roast them.
