@@Ahglock His biggest failure wasn't so much the flavors as it was the texture (and method). Olive oil doesn't go in fried rice. Water makes fried rice clumpy and prevents proper browning (unless perfectly portioned, slowly).

Regarding the size, you have to remember that Gordon Ramsey is a Scotsman. They don't generally do tiny food up there, because there's more of a wilderness/outdoorsman heritage. For grilled cheese, add some smoke paprika to the butter. The color is beautiful, the flavor is outrageous. You'll thank me. Just remember to grill it on low to prevent burning the spice.

Has Brian ever heard of Welsh rarebit? It's pronounced 'rabbit' and is allegedly a centuries-old joke by the English that claimed that the Welsh were too poor to afford rabbits to eat. That's where the name is from but that's not the important part. You make a roux as usual with melted butter and flour, but instead of adding milk like for a bechamel, you add ale or some other beer. Add a generous teaspoon or two of mustard (you want a smooth kind, and be advised that English mustard like Colman's, is hotter than an American mustard like French's, so you may have to add more than this if your mustard is on the mild side). It's not meant to taste overly mustard-y, but the mustard is meant to elevate the cheese's taste. Speaking of, add some handfuls of shredded sharp cheddar or some other good melting cheese, and freshly grated off the block is preferable to the pre-shredded stuff that's coated in starch. Add and stir in a little at a time until thoroughly melted and mixed in. Season to taste with salt and pepper, and optionally add a few dashes of Worcestershire sauce to taste. Spread this sauce/mixture on slices of bread, top them with more shredded cheese, and cook under the broiler until the cheese is melted and it's all bubbling. I just thought I'd share that cheese and bread preparation in case anyone thought it sounded interesting and wanted to try it ^^

Welsh rarebit or Welsh is also very popular in the north of France near the border with Belgium. In that region of France they typically use Maroilles cheese although you can find the original cheddar variant. It's as good as it sounds and even better with a high end Flemish beer.

funny enough i just made breakfast sat down and saw this. :p eating a Grilled cheese... White bread, Australian tasty cheese and a little parmesan grated, English Mustard, and butter in the pan. oh also a little pepper... for me the perfect grilled cheese, takes maybe 2 seconds longer but the mustard makes it pop so hard. (use mustard like butter inside the bread as it holds the sammich together)

My dad was a big cook, and he was the same way. We couldn't have a simple grilled cheese, it would be something like a grilled cheese with chicken in mango salsa with a balsamic reduction. Tasty I guess, BUT NOT A GRILLED CHEESE.

The best grilled cheese I've ever had (I made it) was made with a bechamel of Prima Donna Maturo - white wine reduction or sodium citrate is absolutely necessary to get it creamy, rather than gritty in the sauce; I also use push the final cheese mix through a fine mesh sieve to ensure no protein crystals distract from the gooiness. So yeah, a fondue recipe for grilled cheese is a solid idea. And the use of cooling to help with portioning is a great idea, as it reliably sets up hard.

You can get more but thats the standard for 1 grilled cheese. Cooking instructions 1. Put the cheese inside the slices of bread. 2. I think it's hard to improve a grilled cheese depending on if you're a purist or think things can be added. As a purist it's probably improving the quality of ingredients, types of cheeses, etc. If you want to continue the grilled cheese journey there's a youtube channel called "chef tyler" (not a chef) that has a video called "how to make the best grilled cheese sandwiches"

So, Jamie's best recipe (that i have seen) is one where he just butters some bread with cheese on the middle and lets it sit on the pan for a while. Everyone starts somewhere. Also, (17:17) what does "A quarter of a minute and a half" mean? 45 seconds? 22.5? Edit: Jamie's grilled cheese/cheese toastie looks like a pain to eat if the cheese gets too stiff/burnt. I would have just stuck it to the bread instead of doing the extended skirt/crown. Personal preference there.

This reminds me of Matty Matheson making Italian beef. I just remembered that someone has done a video about Jamie Oliver and his ruin. It went into Uncle Roger, but there are layers of him being his own enemy. Recently I have been visiting Aldi and I got some sour dough bread. It didn't seem very sour, but it made its utility apparent in the sandwiches that I was making and putting in my griddler. It made me realize why the Culver's patty melts are on sour dough. I had no idea what perfect oily mess sandwiches it can make. I miss my sour dough. It seems like, if you have the option, for any melt that will be fatty, or an oily hot sandwich, sour dough, or something with similar characteristics is the way to go. There is so much to experiment with. But don't heat sagey souse.

Thank you for recognizing the differences between grilled cheese and panini. I tried a pop-up center around grilled cheese and melts (bank on with the shaved meat too. By all means add it, but let the cheese and dead still be the star). Every would ask me, "Oh, you're making paninis?" Two different things, completely. I didn't do it long, but I had one guy buy four sandwiches back to back. That was my highlight. 😊

On Top Chef, a chef who won a challenge with a simple family recipe for fried chicken and biscuits said he didn’t want to “chef it up”. I’ve also heard a lot about how what makes a great roast chicken is the simplicity. Gordon does get this. Jamie does get a little fancy with that cheese crown but, aside from looking cool, it adds more cheese flavor and crispness.

My grilled cheese sandwiches are 4 cheeses. 2 types of cheddar, mozzarella and parmesan. If I'm feeling adventurous I might smear a very thin layer of aussie vegemite on one of the slices of bread.

@16:01 Frenchie, Long time ago Heston Blumenthal made a vid on using Sodium Citrate to make your own "melting American singles beer cheese" on a sheet pan, exactly as you described vis a vis the fondue melt. Related, Alton Brown did a grilled, grilled cheese where he melted everything in an aluminum boat on the grill and poured it over the toast.

Frenchie's fondue idea could be made into American style cheese pretty easily. Just add 2-4% by weight of sodium citrate.
