Just in case anyone makes a mistake....at 1:05 it says to roll out to 2cm thick.......I think its meant to be 2mm thick....or that would be one very thick pastry casing lol. Great recipe Jamie, I've been looking for a good bakewell tart recipe. I love the fact that youve used walnuts and hazelnuts instead of almonds. Looks incredible. And your new kitchenware looks beautiful....a perfect colour for my kitchen....yippeeee! Lee x

If you are on a budget, normal dried beans work just fine. Any dried bean from the shops does the trick (or rice!)

I never rate trimming the pastry case before it goes in the oven - even with the beans, the edges still shrink back (as they did here) and make the whole thing look a little messy. I rate it when doing 'rustic' tarts - as with this recipe - but I still think it's preferable to leave excess and trim afterwards. Much love, and I enjoyed this recipe x

His just used different nuts but it's the same maybe no jam on top though. It's Jamie he always adds his own twist hence why his been so popular for so long I'm guessing. I would definitely stick to almonds not a fan of walnuts.

At 1:06 the onscreen note tells us to, “roll to 2cm thick.” Really?! I’m looking at it and unless Jamie’s thumb is 8cm wide I think that estimation is a bit off. It doesn’t even look like a full centimeter. Many chefs are notoriously over/under estimating amounts (add a teaspoon of oil as they dump in 4 tablespoons) but not so much of this from JO. Maybe his production staff isn’t paying the attention they should. I know enough to know if I roll dough to nearly an inch thick it won’t be cooking in the time allotted.

Use superfine sugar, I think that's what it is called in the US. If you can't find it, granulated would work okay too. Incase you didn't know we call confectioner's/powdered sugar icing sugar in the UK.

An interesting twist on a Bakewell tart, replacing almonds with other kinds of nuts. I imagine it's not going to have the usual marzipan-y taste and will be a little more savoury due to the bitter hazelnuts? I might give it a try, but only after I've made the traditional version :)
