Guys, try it the portuguese way. Salt the sardines quite generous on the outside, grill them on charcoal for about 3min on each side, then fillet it with your fingers (its easy, the flesh comes right out) and serve it on top of rustic bread made out of corn. You see, sardines have a lot of fatty oils that are good for your organism.When they start to release those oils to the bread, its just outstanding. The flavour is amazing. And the bread helps you swallow any fish bones that stay in the flesh. Eat it and drink some red wine. Then say "caralho que é bom"

There's this Kerala recipe that I absolutely love to bits. Do all the same things to prep the fish. mix up one or two green chillies, three or four cloves of garlic, knob of ginger and a bunch of coriander leaves, one or two shallots and salt and turmeric grind to a fine green paste and then marinate fish. After two or three hours, just dip each marinated fish in some fine semolina and fry off in a pan. It's absolutely beautiful!

Sardines recipe: Sardines: 7 Olive oil Fennel seed: heaped teaspoon Chilli: 1 Garlic: 4 cloves Lemon: 1/2 Parsley (stalks): 1 heaped tablespoon Salt and pepper. Toss, fill cavities. In oven on full whack, until crispy and golden (ca. 10 min.).

Fennel seeds? that's an excellent idea! I think it will be a nice change from sardines with tomato, garlic, olive oil, oregano in the oven. Sometimes we put the whole sprig of fennel to give the aroma, but had never tried it with seeds.

He should've been more precise. "Full whack" will be different depending on what kind of oven you have. I did "Full Whack" on my electric oven 230C for 10 minutes turning halfway and it didn't even come close to looking like the sardine in this video.

Just tried cooking it for 2nd time using Fennel seed, it taste so weird. Fennel seed is Adas Manis in Indonesia. For me better without fennel seed as in my 1st try on this recipe last week.
