Been doing pesto with peanuts for a while, always knew we could use different kinds of nuts for the pesto. Yet, the usage of different herbs to create more diverse variants of pesto is new to me and I'm fully into it. Next time I do pesto, things gonna get crazier haha.

I like the way you prepare food from your choice of ingredients, method of cooking, to presentation. I like the tools too. Some look very simple and easy to acquire. Cooking doesn't seem cumbersome to engage in whenever you are in the kitchen. I love watching when your children are cooking with you. What a perfect family!!!

Nice one, Jamie. My go-to pesto is a mash up of the following: Sundried tomatoes, red chilli, garlic, EVOO, oregano, little touch of salt. My supermarket of choice has their sundried tomatoes marinated in EVOO & oregano, so I simply have to add the red chilli and garlic. Quick and easy. Got it from Gennaro. Use it with Jamie's dry fried salmon meal instead of the green pesto. So the meal is a combo of Jamie & Gennaro. No wonder I'm cooking so good!

I always have coriander so I always use that and use either cashews or walnuts. I don’t tend to use cheese but I like adding a little lemon juice in the end

I've always believed that the pestle and mortar is way better than a mixer or blender or food processor when making sauces. To me, it feels like you are more in control of textures etc. Furthermore, it adds a more rustic approach to your marinade or creation. Last but not least, don't forget it's one of the oldest kitchen tools. I remember my grandmother, father's mother, using the pestle and mortar. It was made of bronze and she used it for anything be it savory or sweet recipes and well isn't that a beautiful memory? After all, food is all about memories,love and taste

I haven't watched this guy's videos in a loooooooong time. He is still my favourite but what puts me off is that if you are not rich it is hard to make his food from home so you spend all your life just watching and wishing. The equipment needed and recipes are quite expensive to get hold of.

Thanks for this Jamie! Made pesto for the first time and its delicious!! I toasted pine nuts with cashews and pumpkin seeds (good for your intestinal track). And into the blender I added all the ingredients, including a good measure of lemon and black pepper. (I made a honey jar’s worth) I had my pesto in a croissant with cheese, tomato and rocket! It was truly worth the effort, and more satisfying than shop bought. 🥰😋🥐🧀🍅🥬😋🥰

I made pesto before. Only then will you realise how expensive "pine nuts" are and that you may require all the leaves from 1½ basil plants. No wonder nut substitutes are used in the commercial Pesto (read the label on your pesto jar). 😢

You can also not put pine nuts in it, the recipe with them is genovese but other recipes don't have them. 😊

@AlissaSss23 Sesame seeds? No way. Can't you wait till you can get cashews, walnuts, or something else. The Pesto i made with fresh basil, good olive oil, pine nuts, and parmesan was quite memorable. I haven't purchased commercial green pesto since 2018 because I only want home-made now. 😅😅

I've always wondered how to serve pesto with Spaghetti properly. I always put a little bit pesto on my plate, then Spaghetti over it with a little bit of that water it Was cooked and then again a bit pesto on top. And then i mix everything until its completely covered. I dont know if thats the right way tho 😄

The trick is to keep it over heat while you mix it, so you remove most of the moisture and the pesto will stick to the pasta. If the pesto has a lot of oil in it, or you add too much pasta water, the pesto will just end up at the bottom of your pan.

My personal favorite Pesto i've made myself: Nuts: 2/3 cashew + 1/3 wallnut Herbs: 3/5 basil + 1/5 spinach + 1/5 rucola Cheese: 3/4 Parmesan + 1/4 aged gouda cheese Everything else: however much olive oil is necessary for your portion, salt + pepper + dried thyme + garlic + tiny amount of nutmeg and mix everything in a blender. Than put it in a pot and heat it up a slightly while adding a small amount of heavy cream (dont let it come to a boil). Take it off the heat and add some lime juice and a bit of the zest from the peel. Absolutely 👌👌👌
