I just cooked this and it's so delicious! I like creamy, but this recipe is good, too. I used basil instead of rosemary. I also added chopped basil as garnish. Eating it with sour cream on side and hot sauce, hmm.... delicious! You earned another fan here. Thanks, Jamie!

Hi Jamie, love mussles, I come from Chile, we have the longest coastline in the world, and we eat a lot of mussles, choritos, we call them. In addition, my grandfather came from Belgium, so I have eaten mussles my entire life, he also made them with french fried potatoes, which should be called belgium fried potatoes, because they invented them. Tita Linda Love this comment! I have too, It feels like yesterday you were on your scooter arriving back at your house to start rustling up some delicious foods. You were such a breath of fresh air, so different to the TV chefs we were accustomed to. I love mussels too, I only really know them as Moules as I grew up just off the French coastline so used to go to mainland France specially to enjoy a bowl of Moules 👌❤️

I remember when I was 16, on holiday in the South of France. Dad & I got this huge ceramic bowl full of mussels in red wine in a restaurant. Bloody LOVED it! Love this receipe Jamie. I shall 'attempt' it! Ha! Thank you mate Tim

What's not to love to about this dish fresh ingredients, seafood, herbs, chilies, tomatoes and cooked three ways by a wonderful chef...I love Italian, seafood and fresh ingredients, I particularly love Italian cuisine for this very reason, thank Jamie for such a wonderful recipe and Kiora from New Zealand.

I’m Belgian so I will be a little bit prejudiced about it, but I would also add green celery to any one of those excellent recepies. Mussels and celery are a match made in heaven.

I had a horrible experience at a Chinese buffet a good few years ago (I know I know, I was asking for trouble), which involved shall I say 'not so fresh' mussels! Needless to say, they were projected from my body at an alarming rate, along with my love for mussels, well so I thought. I tried them again last year when I made them with garlic, cream, parsley and white wine (moules mariniere) and I remembered how amazing they can actually be, providing they are fresh, and bought when there's a 'r' in the month. Cheers Jamie, the recipes have given me some great ideas!

In a normal situation I would agree. But the ones I had eaten, were removed from the shells, So I had no idea how fresh they were until i'd eaten about half a dozen...which meant a swift trip to the toilet!

Spooderman it's not about the culture, but those buffet tend to be cheap and not very reliable. And that happens here in Spain to I remember a terrible beef with some kind of sauce that looked and tasted like shit. It granted me a trip to the toilet with a single bite

Slight correction: Its not the seeds that are the hot part, its the white membranes the seeds are attached to.

"Any that are open (before cooking) get rid of them" ........... Sorry Jamie, this is WRONG. So, any that are open, give them a little tap with a spoon or on the work surface and they should close meaning they are good to use. If however they don't close, then get rid of them. One other thing to note ....... I understand that mussels are best when there is an R in the month. Also ..... big respect for Jamie; a top guy and a great chef. Love his videos and got most of his books - a must read.

I am usually wary of things I've never eaten, but you make it look so simple and tasty, it keeps opening and blowing my mind. One question though - how does one eat the mussels? Do I pull the meat out with a fork? Thanks!

with your hands, mussels are finger food, you can dress them up with pasta etc but really you get a Kg of mussels and a half glass of beer,wine and steam them. then get in there with fingers and tongues

You can use a fork, but the best way is to use another mussel shell to grab the meat and pull it out.

I was in Turkey~ Kanakkale (original Troy, where the wooden horse stands donated by the movie Troy) & Izmir June 2019, I saw street vendors selling these mussels raw on trays by the beach. They just eat it raw with fresh lemon juice!

Looks delicious! Only thing I don't get is why using two chillies without seeds instead of just one with seeds? Wouldn't that be about the same in case of heat with less wastage?

Miingno the chili taste is in its flesh, not so much in its seeds. The spicyness is the other way round (yes I know, most hotness is in the white collard..but we both get the point I guess) So using more chilis without seeds result in more fraguent, less spicy sauce. cheers :)

The normal chillies we have here don't have taste, they are only cultured to add heat to a dish sadly. So if they do indeed have a taste, then it does make sense to use them this way. I'd probably keep the seeds and membrane, dry them and put them away for another time~

Miingno Good call on the savings there. Try to find "meaty" chilis, meaning chilis with thicker flesh. The meatier the chili, the more fraguent it is. cheers
