I just love her voice and accent. I could watch her for hours on end. I love her passion. You can tell that she loves good food not just cooking it but also eating.

Why people keep commenting about not enough salt? The pasta is cooked in salty water and Mussel is salty from the sea water and you can salt later if on the table if you want. Its better to serve undersalted food than oversalted. I usually find that people palette differs on sensitivity to saltiness.

I sometimes wonder how fucked up these people's palettes are from too much sodium. There's salting your food, and not being able to taste it because you drowned it in too much salt. Or worse, emptying your whole spice cupboard into a dish so you can't taste the actual ingredients anymore and then pretend that's 'seasoning'.

Agree. I can't stand excessively salty food (peanuts, French fries, etc.)

Very true. I’m on limited salt per my Doc and have found I barely miss it when I increase the heat and garlic. It’s all relative.

I love Nigella’s appreciation for her ingredients. Lots of little lessons in this episode. Mussels are one of my favorite fishy Friday dishes. I’ve never thought of using a bit of sherry, but maybe next time. Dunno if the sherry would cook off that quickly (in the event of minors at the table)

Heat the pan before adding cold oil. It will give a nicer sear without over saturating it with oil . I just learned this one and it’s works pretty good 👍

Spicy doesn't equal flavor. I will never understand the current trend of thinking that eating a ghost pepper is actually tasty or drowning a dish in hot sauce suddenly makes it better.

Perhaps coriander or rosemary, or a dry herb: origanum, mixed Italian herbs, etc., though not too much of either fresh or dry. Or perhaps slice a spring onion thinly and fry it along with the chilli and garlic.

The holy Trinity is and always will be a Cajun thing: onions, bell peppers, and celery.

Yeah, some mix it up with mirepoix which is another ‘trinity’ of carrots celery and onions. Usually all cut to the same size with one part celery one part carrots to two parts onions . Do you do one or two parts onions with your bell peppers and celery?

@@m.theresa1385 I usually do equal parts of all three but it’s common among Cajuns to do 2 parts onion, 1 part bell pepper, and 1 part celery.

Probably she's trying to make understand people about too much salt in the food isn't a good thing. Pepper can be a blessing or a curse. Personally less is more.
