You need to soak the cashews overnight in the refrigerator if you want it smoother. They will expand and soften overnight.

I am thinking I should Maybe set up a video camera while I cook and act out the process like you do and I would enjoy making a meal. I am an outside addict working in the garden and being with the pups and when I come back inside I need directions. Thank you for another great video showing us the joy of recipes in your newest recipe book. I love exploring the Woman Warrior book---so many treasures in there!---and have the whole collection of Esselstyn books. I use them all frequently! My latest craze is making a bowl with wild rice, baked Tofu cubes, and lots of roasted veggies, with homemade Teriyaki Sauce. Heaven!

Love you ladies and the recipes! I've been plant based for over 7 years but my husband is a carnivore. Trying to cook for both of us can be challenging. I'd love to see your suggestions on an entire meal with entrée and sides. If you sell a cookbook that includes that I'd buy it in a hot minute.

NYT former food editor Mark Pittman wrote a book titled "VB6" after he visited his doctor and found he had incipient heart disease in his mid-50s.. He developed this plan of eating basically plant-based Whole Foods until 6 p.m., when he would revert to his carnivore desires. He lost 35 lbs. over four months and gained a much healthier blood panel. I wonder if your family might consider this kind of compromise. A trip for a well check with your doctor might provide evidence for this kind of approach for your carnivore enthusiast. Good luck!

Thoughts on those with osteoporosis and plant based diet? I find it impossible to to get 1200mg/day in plant based unless adding soymilk that has added calcium carbonate or enriched products. Is there way to get enough from plants? Would like to learn more on this topic. There are lots of us with bone issues. I was dairy and gluten free past 13 years for inflammatory issues---high plant based but still some fish and limited meat.

Thank you so much ladies!! When I first watched the video, i was because I was eliminating oil from my diet. Recently I have taken on Essy's heart healthy nutrition plan which prohibits nuts. So I will be trying to do this with the canalini beans instead. I appreciate all that you ladies have done to put together some delicious plant powered recipes!

I agree that if water is an ingredient, it should be listed as such. I try to cook “mis en place” and have all the ingredients laid out. Recipes that only mention it in the instructions are confusing.

Looking for information from Ann, Jane or anyone that can help: Several family members are anaphylactically allergic to fish, dairy, eggs, soy, peanuts, tree nuts and legumes. We are looking for pbwf substitutes for tofu, tempeh, etc. Thank you in advance for your suggestions and help. (The first three we know will not be a problem with a pbwf eating plan.)

@@JaneEsselstyn I looked at tempeh starters and they all use beans or peas, which is no good because he is allergic to soy and all legumes. May you have any specific products or suggestions? I'm kind of weirded out about growing mold on food at home. Is there any chance of bad molds growing? Thanks again!
@Gail-bz5kh

Traditionally, most proteins are found in a PBWF diet from nuts, seeds, and legumes, so you're posing a very interesting challenge. I believe Rip Esselstyn linked protein deficiency to Kwashiorkor---basically, low protein is seen mostly in cases of starvation---but does a diet high in grains, fruits, and vegetables provide enough protein? I think that's what you're asking. (Tempeh is another treatment of soy, so that might not work out so well.) You're asking a great question, and I hope you'll pursue it with other nutritional experts as well. Remember, the protein deficiency myth in American advertising started in the 1950s, and has never stopped thanks to the meat industry. It especially appeals to aspiring athletes, but without solid science behind it. Good luck on finding out more about this complex issue! Best wishes, and my deep appreciation for caring so much about your loved ones.
