It's time for the January Pantry Challenge ♥ Each week during this month, we will share with you the meals we cook from food readily available from our pantry. I'm sure it's hard being apart, but great that Rachel is available for someone in need. Being solo, you're doing a good job keeping up with the pantry challenge and your channel.

Great video, Todd! It is very difficult to film every meal. You've been a wonderful trooper for keeping it going while Rachel has been away. Thoughts and prayers with all of you that all is well and Rachel gets to come home soon.

Hats off to you Todd - you are totally self sufficient and doing such a great job with the pantry challenge. My husband is clueless unless it is a hot dog, burger or pasta. Rachel is proud of you I'm sure!

I can only imagine how difficult that is. Especially when you two spend so much time together. Makes one appreciate and embrace what the families of our military personnel must go through for months and even years at a time. God Bless

I'm glad that you, Rachel and your family were able to be together, even for a short time. Hopefully it will sustain you both until Rachel can come home. As an Air Force wife, we're retired now, I can relate to your situation. I really enjoy your "What's for Dinner" videos. You both cook similarly to me and I always like your meal ideas. You are so at home in the kitchen! My Dad always worked in the fields and the barn. He joked that all he could make was Raisin Bran. Wasn't too far from facts! 👍

I'm sorry you're on your own for so long, but I'm loving watching the meals you put together. It is giving me ideas about what things I'd like to add to my pantry, as well as some great meals I'd like to cook. To be honest, sometimes, I skip vegetables too. And sometimes I just roast or stir-fry some vegetables and skip the protein.

Yes, very inspiring Todd. Hubby and I are currently dealing with kitties who have kidney failure and also diabetes so we don't have a lot of brain power to deal with meals for us. Thank you for these meal ideas. Praying for your family need(s), God knows what is needed and I have faith that He will answer those needs in His own time.

Wanting to do something is SO much better than having to do something. There's just a more joy and heart that goes into doing something that you really want to do as opposed to having to do something. I get it 😊

Well said Todd.... I hate being told I have to do this that way... No, I do it MY way. A good example was my preserving beetroots and I basically used Rachel's recipe as a guide which is great by the way!! Now I want my beets to last in the pantry so I have a good supply (not there yet but it will happen) and I spoke to my eldest sister and she told me I have to do it this way which is easier but does not last as long as the full canning process. Here is where I was like a naughty one....yes sis no sis etc. etc. .... and then did my own thing with cook number 2!! hahahaha and it worked again so thanks to Rachel for the basics and inspired me to do this.

I love Rachael and miss her but I also love your videos. We have an 1870s farmhouse with a short Michigan basement that has the same opening to the outside as shown when you were bringing in the lumber and 140 acres near Port Huron that we use as a retreat but we live in the suburbs of metro Detroit and have a huge garden and I can. I relate to all your home improvements. I love your sweet little dogs.

I found doing the pantry challenge & Canuary very rewarding. I went through my freezer, pulled out all the scrap bags & bones to make broth. I focused on working through foods by using the same products for several meals. My husband will only eat leftovers once. I eat them until they’re gone. I restocked the freezer with individual meals with leftovers too. So my husband & son could grab & reheat them later. Developed some new routines.

Todd, dinner looked good...especially using the green chiles. They say absence makes the heart grown fonder. When you do almost everything with your best friend, your spouse, you miss them. Rachel has been gone for 3 weeks, it's hard even when we know our spouse is helping family. I'm glad yiu both had a nice weekend together. My husband was working out of town(Virgina, Tennesse, and Arizona)for three weeks. He came home for 1 day, enough time to wash clothes, spend time together and go to the next job site. He's home now, were getting caught up on homestead projects. I'll send prayers to both you, and Rachel that all goes well for your family member.

Todd, I know it's hard to be apart. My husband and I did it for three years because of our jobs. Rachel is such a sweetheart to drop everything to be with a loved one in a time of need.

Your cheese sauce looked fantastic. I know it is hard being away from your other half. My husband is a truck driver and with economy the way it is he's been away much longer than normal. Hope your family is all healthy and doin good. Your doin fantastic keeping everything goin on the home front.

Great minds!. I made chicken enchiladas with chicken I canned and green chiles. I didn't go fancy with cheese sauce, just added some salsa verde and cheese on top. Again thanks for sharing with us. Good luck with all the basement work which must be super hard for one person. Let Rachel know we miss her.

Being apart is definitely challenging. My husband works on the road a lot, sometimes gone a month or so. Sometimes only home a day before he leaves again. We have 3 young kids. Communicating is difficult, especially if it's something serious. Advice is always, save serious stuff for when you're home. But that can't always be the way, because sometimes you can't put off conversations for months. Hopefully everything settles down soon and y'all can be together soon! I had a quick question if you see this: How do you train your chickens to go to your coop at night? We just got our chickens! I'm finally getting started this year. You guys told me to go for it, so I am!
