I had to smile when you showed your food processor. I had that same one for many, many years. It finally broke and I was so sad because my Momma had given it to me and she had been gone for many years when it broke. I have never had another one that was as good. Bless your sweet family. My Momma and my Grandmas were all rebel canners and none of us ever died from eating it. Lol

A dear lady and good friend, in late August, when her tomato vines had a lot of green ones that were too late to ripen on the vine would make hot dog relish with nearly the same recipe for your slaw. She substituted ground green tomatoes for the carrots, salted the mixture over night and drained it, but cooked it a short time in vinegar, some sugar, turmeric, celery seed and mustard seed. She then put it up in pint jars. It put the sweet relish from the store to shame. It is one of the best relishes I ever tasted and, with mustard, dressed the best hot dogs on buns you'd ever want.

Thank you, Tipper for such a calming video. I watched you and Matt harvest the cabbage and, now, I’ve watched you can it 😊. I’m not doing a thing but “sitting in your kitchen” while you work. I’m actually enjoying some pea soup 🥣 even though it’s a warm summer day outside here. I just looked at the Google map directions to Natahala Gorge from my home and it’s only about 3 hours away. I haven’t been there since I was a little girl ages ago. It’s sad to have all this beauty surrounding me and not take my Grandkids to see it instead of other places. Thank you ☺️ so much once again for bringing peace and calm to a crazy world.

@@RobertaHoyle• I really wish I made it myself!! I get a big can of Progresso Split Pea Soup with ham… actually I get more than one since I’m on this pea soup 🥣 “kick”. My Granny, “Miss Mary, and my Mama all cooked from scratch and from the garden just like Tipper (and Matt do). But, because they were all about cooking without any messes - I was never allowed to cook. By the time I was old enough not to make a mess in the kitchen - I just didn’t have time to learn 🤦🏼♀️. Those 3 women didn’t even let me wash or dry the dishes!! I guess that’s why I enjoy watching Tipper cook, can, and talk while she’s doing it all. It feels just like I’m that little Girl again listening to the sounds and talk around cooking while I sat out of the way in the corner quietly playing with my doll and absorbing it all ♥️

When I got married in 1984 we got a food processor as a wedding gift. I was so excited! I'd never used one before. So the first time I was using it, my dad called in the middle of me chopping my first onion. I told him I was running the food processor, so hold on while I turned it off. And oh my goodness, what a mess. I was laughing when I came back to the phone and Dad asked why. I told him I'd just made onion baby food! Learned my first lesson about pulsing.

I have the crock that my grandparents fermented kraut in probably 80 years ago. My Mom, who is now 82, remembers them doing it since she was little. They would hand chop cabbage and then use a grater to get it finer. My Mom said it took them all day and then several days to add salt (I'm guessing). I think (don't hold me to this) they would just leave it in the crock all winter in a root cellar and just go get however much they were going to eat, stirring it every time they got some out. The crock now has a place of honor in my living room. I love it!

I’ve made kraut just like your recipe many years ago. Best kraut we’ve ever eaten! (Didn’t know I was a rebel canner😊). Difficult to grow cabbage in the early spring in west TN. Our garden spot stays so wet at that time of year. But the trade off is my husband could grow the best Silver Queen corn in our county. All our relatives worked together on “corn day”, grandparents, parents, children & grandchildren so that we’ve put up over 400 pints of corn in one day. Everyone had a job to do. But it was fun working together, many stories, laughter & memories. Alway enjoy listening to you and your daughters. I’m originally from southeastern KY in the foothills of Appalachia. So nice to hear your voice each day and see what you are getting into.

If we grow cabbage this fall I am gonna try the slaw recipe. My mother in laws recipe for kraut is almost the same as Granny's she adds the same amount of salt but 1tsp in the bottom and one on top and 1tsp sugar and 1 tsp vinegar to the top too . What I really love about hers is she puts chopped green tomatoes in hers. 2 cups to 1 head of cabbage and sometimes 1 cup chopped onions to 1 head cabbage, but the tomatoes gives it a zing that I love. Everything looks delicious. Yall have a blessed night.

I'm going to try the coleslaw recipe this year. Thank you. Making it in the jars is so easy. I pack the jar with cabbage and pour in salt water to cover (2Tbsp salt in 1 quart of water). I line up my jars on an old towel on the counter then, I cover all the jars with 1 flour sack towel and let sit for 7-10 days to my desired sourness. I put the flats and rings on the jars and store in cool / cold room or refrigerator. So easy. So good. So good for you; prebiotics, probiotics. We eat it cold or at room temperature to not kill all the health benefits (good bacteria). Topping pork chops / roast, hot dogs, or just a tablespoon or two as a side.

I saw Meagan from True Grit: Appalachian Ways make canned coleslaw (same sort of recipe as the one you are using) and I made it for the first time this year. We love it! I also make kraut in jars. I just use cabbage and salt with no water and I make it on the dark of the moon if I can so the liquid it makes doesn't pull out too quickly and spill over. I almost always add caraway seed to mine because we love the flavor and sometimes I add chopped apple or pear. I make quart or half gallon jars of it and when it's finished working I store in a spare fridge. We have a little kraut with dinner most days. I love the flavor and the pro- and pre-biotics it provides. A little Appalachian wisdom to do with making kraut: My Mom always said women shouldn't make kraut during our time of the month as it will spoil it (turns dark). Her Mother told her this. I asked her if she'd tested it and she said that she had and the kraut did turn dark. I have never tested this theory myself. I know that bit of wisdom is a little TMI, lol, but I think it's well-known in Appalachia.

One day I was eating lunch and she had this crunchy like pickled slaw..it was delicious…She told me it was Freezer Slaw…I’d never heard of such..and couldn’t believe it would retain its crunch after frozen. She did it in small bags just enough to serve with supper she run water over it..put it in a serving bowl which she was pressure cooking her supper making corn rest And by the time family sat down to eat it was thawed and ready with the rest of the food. Maybe you can find the recipe on the internet..I believe though it’s similar to what your making now.
