A very good explanation of the brewing process.His explanation was clear and logical supported by visual aids.

Well explained, this guy knows about beer. I think his cadence in speech makes him seem like he's reading a teleprompter. Knows more than some here who are judgemental.

Someone should make a channel that takes the short illustrated form used in this lecture and apply it to all food-from-scratch processes that only include the defining features.

Gino, you are correct. Yeast was not officially discovered until Louis Pasteur. Yeast was added to the list later on.

This is a common misconception, one I had myself until I studied further. Pasteur didn't actually discover yeast - he discovered the science behind yeast and its role in the fermentation process. Brewers had already been using yeast long before these discoveries were made - but this new depth of understanding, thanks to Pasteur, allowed brewers to fine tune their practice.

@@amybeers1316 As I know Pasteur was the first one who could isolate the yeast. But if he was the first one how could brewers use it? I mean what kind of form? Maybe the settled wild yeast from the previous brewing.

Dear sir, I think the original purity law require only three ingredients hops, water and barley yeast was allow later, please correct me if I am wrong, thank you.

Reinheitsgebot was altered to include yeast once that microbiology was discovered.

Leeuwenhoek's microscopes weren't used until the 1670s to observe microbial life.

You're right. Three physical ingredients, but also, one spiritual one. Since yeast wasn't yet known to exist, they attributed the benefits of yeast (ethanol, carbonation)to created in fermentation to God.

The law did only state those three ingredients; however, yeast WAS used in brewing at that time - it just wasn't considered an "ingredient" since brewers would harvest the yeast after fermentation to use later in another batch. I think maybe this video is just simplifying this idea...since the video isn't really about the technicalities of the Purity Law.

'Purity' law's purpose was to prevent lower-class people to make wheat beer, which was valued higher. This 'law' made wheat beer accessible for aristocracy only.

Interesting stuff. Slightly bothered by the factual errors pointed out by others, though. One thing that I noticed: there's both written and archaeological evidence of brewing beer that far predates the 300 BC that's mentioned in the video.

its not in the original purity law of 1516 as we had simply no clue about our little coworkers at that point. later it was added to the purity law like other stuff was added later too

incorrect info when he is talking about ageing for taste in primary, also secondary fermentation does not develop CO2 for mouthfeel.... Really OU get someone who knows about the brewing process and isn't obviously reading off a flashcard some undergrad threw together.

What's funny about the whole brewing and homebrew scene is that it's totally a white dude flannel thing, at least that's what most of the beard brahs think. Don't tell them that it was invented in ancient Sumaria by what they would probably call Muslims.

Fermentationable? I believe he means fermentable. I tuned out after that... Michigan State University's beverage science program is one thousand times better than this; they actually offer it as a minor.

Your definition of beer applies only to those in the USA, and not the entire world, right? You wouldn't be so presumptuous to dictate what beer means to other countries?

He is only stating chemical facts, he is not presumptuous, he just right. This video is a really rough summary of the beer making process, many details depend on the style of beer and its birthplace.

@@leonardobulgarelli9256 Good question. My guess is that you are not a native English speaker which is fine. The way he is talking and the way he can't pronounce some commonly-used words in brewing science is an indication that he is reading something without knowing any knowledge of it.

@@roboedar true, I'm not a native English speaker. I studied the brewing process in my mother tongue (which is Italian) and I probably didn't perceive the errors. Anyway he is stating chemical facts and I may assume that his mispronouncing is due to him being a chemistry professor more than a brewer. I don't know, in any case now I get your point, thanks.
