@@faithsparks7566 tbh, i may be biased bc i don’t like it but, Japan’s pork ALWAYS looks sooo nasty to me for some reason 😩😔. like everytime he shows us a dish w/ pork, which is like 90% of the time, i think abt how whenever i visit Japan, i need to remember only order beef/seafood dishes LOL 🤣😩🫠.

@@mmenace2sobrietyysorta depends where you go. Like you can't eat in Okinawa without eating Okinawan pork, it's so central to their cuisine. That said, a random ass joint in Tokyo probably won't have the best pork.

If Shokugeki no Souma taught me anything is that Soba is not a neutral vehicle like Ramen. They can't sit down and get carried by the broth. In fact the only reason you put anything with Soba is to bring up either its taste or smell. Soba is the star of any dish containing it and adding strong stuff like cheese will just muddle their quality.

ב''ה, I shouldn't be looking at this with the pork anyway, but for whatever reason you can kinda expect that from a lot of eastern approaches to dairy sauces, so I can taste what happened with this one just by looking. Buckwheat noodles aren't unheard of even in Europe, a version that truly slams would be possible but probably also add another 900 fat calories. And use Beyond jerky and some Bacon Salt to keep it kosher.

Mind you lawsons carbonara is way better it has a nice smoky kick, it’s also way cheaper at only 300 yen for a whole bowl, everything you need is at Lawson. Don’t forget the soba version uses Okinawa soba not Japanese soba. Don’t forget that true carbonara is made with fried pancetta (bacon) not ham so don’t use that.

I had a dish at a place called Rintaro in San Francisco that was on the menu as Udon Carbonara. Hand made udon, raw egg, and shaved katsuobushi. There might have been a bit of dashi as well as some parmsano reggiano.
