My mom has been in the hospital for 3-4 weeks now. Just moved her 2 days ago to a rehab facility. Her nurses at the hospital, loved that we all have gardens. One lord love him he has been trying to start an indoor container garden. I sent him several starter plants lol I think I started something other nurses wanted some as well. So Plants to the hospital for the nurses. Cuban Oregano, Lemon grass, Moringa, Cow peas, and a Serrano pepper plant. Love that I can share. I live in Central Fl and do sustainable food gardening for survival and just so I can eat healthy. (Major food allergies) You should try Moringa. It's a tree, but the entire thing is edible. Seed pods, leaves, roots etc. It is also one of the healthiest plants on the planet.

All those tomato's, time to can them for winter. The beans that are overly ripe, you can peel them, let them dry out for a day and then put them in a paper bag in the back of the freezer for next year planting. Next you should get about 3-4 chickens for eggs. Those are always fun. Have a wonderful and Blessed day!

For the bell peppers: cook them in the oven and store them in air tight containers, covered in olive oil. They're soooo good!

No garden this year but next year I'm all in 😊 Tomatoes, peppers, carrots, beets, water melon, green beans, straw berries, swiss chard, grapes, and of course wild black berriers and raspberries that has taken over a few spots. Chickens? Not sure yet...my neighbor have bees and the honey is good.

Love Love Love your gardening videos!! Girl, you need to get yourself a dehydrator!! So many fun snacks you can make dehydrating fruits and veggies. My family's favorite dehydrated snack is apple slices! I can't make enough. Then there's sliced tomatoes with pizza seasonings or Italian seasoning on them. Besides eating them like tomato chips I use the tomato slices in sauces and soups also. You can dehydrate tomato slices with no seasoning and then pulverize them to make a powder. That powder can thicken sauces (it's just like using tomato paste), add to salads or smoothies. Oh, then there's zucchini slices with Italian seasoning. Another is cucumber slices with salt, pepper and vinegar spritzed on it. :) You can put any spices/herbs on dehydrated veggies! Be creative! These are just a few ideas on dehydrated veggies and fruit. The sky is the limit!!

A recipe for the peppers is DiSanXian (地三鲜). The main ingredients are potatoes, peppers (bell peppers, but you can also add spicier ones) and eggplant. It's a popular dish in Northern China. I think you might like it (also you can use a lot of peppers and not really taste them) Another recipe recipe for the tomatoes could be Chinese Tomatoes and Egg stir fry. It's a pretty simple dish, takes maybe 5/10 minutes to put together. And you can use quite a few of the beef steak 🍅

@yeevita

Portion them before freezing. You probably already know but if you freeze them separately first, then put them in your freezing container, they will stay separated, so you can use as you like. You can also freeze together a bag of say all your soup ingredients. The whole bag can go into winter soup from the freezer, in winter when you really want that tomato and pepper flavor. You could also blend them into salsa or whatever, then freeze into portions. Thaw, add oil, mix and voila! Winter dressing. I bet your fish grill is perfect for your eggplants. You can grill, cook your eggplants, then freeze that for winter. Make your babaganoush and freeze it, for when it is not summer.
