Yakisoba doesn't taste like spaghetti, i didn't even acknowledge that they look similar because of that. To be fair, yakisobapan (this is what this sandwhich is) are generaly smaller and cheaper. This one seem, like you said, messy to hold so it's a meh for me. I prefer going with the smaller one with a side dish to go with it (like a onigiri or if i've the chance, my favourite, the tonkatsu sandwich! )

Where I grew up, we had "chow mein sandwiches", which was just a soft bun topped with a mountain of "Asian" noodles in gravy, topped with the other half of the bun. As a sandwich, it's absurd, and really not that different from just eating chow mein, but also no one pretended you were supposed to eat it without a fork and knife haha

The super-soft bread you sometimes see in Japan is loaded with preservatives BHA and BHT. This are used across the board in American grocery store bread, albeit at modest levels, to keep it fresh-ish for a week. In Japan bread's sold in 2 to 8 slice bags without preservatives. But as an exception, they have a few bread products that really go overboard with it. My wife had one that literally brags about the BHA and BHT in a call-out balloon on the front of the package.

I think it has more to do with bread culture being imported into the area and the locals were looking something within their preferred palates to use as a filling. We Asians don't exactly have slices of ham, salami or cheese readily available, nor do I think people back then wanted something that looked raw, so we tend to go for the next best thing. Carb on carb due to scarcity is a true thing in many places, but yakisoba pan doesn't seem to have that history. This is more in line with things like anpan that uses red bean paste and ice cream on bread.

@@madensmith7014 It's true that there was a great deal of exposure to american culture post war, and while certainly the most impactful, this wasn't the first big cultural exchange. There was contact with their neighbors pre-isolationism, and with Europe after that. Eventually the Meiji restoration brought about a rapid wave of industrialization and for a while Japan shunned away from their culture, which would come back as nationalism in the 20th century. The Japanese, like any other culture, have preserved foods which they combine with staples (mostly grains). Apart from anpan and natto I'm not aware of any other staple on staple dishes, and even then, there's an argument to be made about beans being globally treated more as a protein than a carb source. Which bring me to the idea that this wasn't caused by scarcity as much as by rapid urbanization: traditionally preserved foods are harder to come by in the quantities needed to serve fast food to an incoming wave of displaced and/or immigrating people from the countryside.

I thought noodles and bread was weird when I was a kid, and a classmate and friend who was doing that with spaghetti and garlic bread in the school cafeteria saw me going what the- and then told me to just try it. It was amazing. I still do it to this day. Not as a full sandwich, but just spaghetti heaped on to the garlic bread. The key was the crisp toasted garlic bread. (If you've never tried it before, give it a shot. Bet you'll like it) But soft bread with noodles, at least for me, unless I was starving, nope.
