Shizuka this was very interesting, I’ve had miso soup at Japanese restaurants and it’s one of my favorites. I will have to try other miso related dishes when I come across them.

Miso is also one of our favorites since it is not so heavy on the stomach and you can eat it every hour of the day!

Loved the whole atmosphere and tradition of miso production using piles of rocks to compress the miso. How very ingenious! Food looked great and Shizuka has the perfect balance of friendliness and professionalism for this presentation. Cool! Cool!

That miso sauce must have been absolutely amazing on that katsu. The miso ice cream sounded interesting as well! I never thought that would be a flavour of ice cream!

Imagine being in that area with the 6 tons of miso during an earthquake. Watch for falling rocks! Everything looked delish! Can’t wait to get there, and try some myself!

Miso soup with baby clams is so yummy... Like cooking slow roasted miso salmon.. A recipe I learn during lockdowns 2yr+ ago. 😅

Thanks for giving me a great time and a lot of information as well same as always!! Recently, I really into eating Miso ramen which is not only place of the Miso but also many places all over Japan like Hokkaido one, Kyushu, Hukushima and Miyagi. So, I’m really happy to watch it with you guys!

Miso must be different than miso you get in local North American sushi place... Miso for me is salty soup, sometimes with tofu bits or seaweed bits bonus. But, usually salty, murky, watery soup. Shizuka is amazing, she can make drinking tap water seem deliciously exciting experience.

They're the same, there's different types of miso i.e red or white miso. The one in the video is hatcho miso which is a dark red variety. What you're describing is not miso but miso soup which is made from just dissolving miso with hot water and dashi.

If I recall, Yuba is actually the skim from the top of heating of soy milk (analagous to scalding cream), not necessarily anything to do with Tōfu... excellent to still see traditional miso production still being done⁉️ I’d like to know how old some of their aged misos are❣️❓I remember old farmers in akita and aomori with their homemade farmhouse miso, sooo delicious and the aroma, much like Hatcho Miso‼️ Actually brought back several large tubs home with me x lasted near on years...
