"Wagashi" is Japanese traditional sweets, typically served with Japanese green tea. These are commonly made of rice and wheat flours, azuki beans and other kinds of beans, sugar, starch syrup, some with eggs... "Wagashi" are primarily intended as a complement to the taste of green tea, served at traditional tea ceremonies. Therefore, the beautiful appearance is admired as well as the taste. Quite often, the season of the year or the nature such as flowers, birds, the moon, etc... is expressed in its appearance. Also, very healthy, as artificial flavors are rarely used so as not to affect the taste of tea. Very soft, a little pasty, mildly sweet bean flavor. Not my favorite Japanese confection, but it's nice. Looked like some mochi might be in there too. That's a little more sticky/chewy and mildly sweet and starchy.
I love the fact that they do everything by chop sticks

One thing to know/remember is that the wagashi in this video are not meant to be a regular use kind of sweet for snacking or dessert. These are meant for things like tea ceremonies, welcoming an expected guest, special ceremonies/occasions, ect. There are other businesses like this in Japan where you can go in and get a wagashi and a bowl of matcha, so it is not completely exclusive only to those occasions. But, you typically would not find someone with a box of these in their home to munch on after dinner or something like that.

It looks like sweet mochi (sticky and starchy rice paste) and the brown/maroon colored inside is the red bean paste. I love the taste of red bean paste also it's healthy. Sadly most people hate healthy foods while some taste so good.

Похожее угощение сын привозил из Японии, " мочи" называется. Почти не сладкая типа мармеладка посыпанная рисовой мукой. Но очень красиво упакованы😁

If you pay attention at master's hands, you'll find they are very smooth and in good condition. I think that's because they rubbing sweets all day...

Do you cook with loves at home too? Proper cooks do not use gloves. You need gloves for untrained people that don't go through a proper testing process. You have to meet certain criteria to be able to work with food, at least in decent places. You also spend plenty of time learning everything about hygiene when learning to be a cook of any kind.

Блин народ, вы что в правду думаете что в России повара и кондитера перчатки носят? Хренушки. Сама работала правом ив России и в Германии. Никто при готовке перчатки не носит. По правилам санитарии перчатки не нужны если нет открытых ран на руках. Достаточно перед работой вымыть и продезинфицировать руки, ну и ногти должны быть чистые и под корень обрезаны.
