First time trying the Ayu fish, a popular fish in Japan but not known throughout the world. The fish lives in only the cleanest rivers and feeds on moss, giving it almost a floral flavor with many describing it as a melon flavor. I am Gifu and tasting the ayu also known as sweet fish for the first time. Ayu was made into fish ramen and pizza!

I found your channel last night. I have been learning about Japanese fishing through KZbin and a friend of mine who taught English there for 13 years. The second fish you are looks very much like Sculpins in North America. They are both fresh and saltwater but the freshwater species I bet could be eaten the same way. The Ayu is legendary and it is something I will never catch. Thank you for this show, I have subscribed.

A good eating fish like a California Sculpin or freshwater Crappie if taken care of correctly when caught the fillets will smell like watermelon. I used to commercial fish on my dad's boat on weekends and we would fish for rockfish or sometimes mis-called rock cod. My dad had a customer who owned several Chinese restaurants in SoCal and he was very picky about the fish he'd pay a premium price for. It had to be certain types of rockfish, no boccaccia and some of the big rockfish heads were also kept. First thing is the fish are caught on hook and line and when brought aboard the first thing I did was bleed the fish and after re-baiting and throwing the line back over, had 40-50 hooks. I would then immediately put the fish on ice after they bled out. All the fish caught that day would be filleted out including the cheek meat on some of the fish. Those fillets lightly smelled like watermelon, the fishy smell went out with the blood. I still bleed even crappie or walleye two very good eating fish and get them on ice immediately.

@@Nikeair453 Mine too and if taken care of like I commented above it is THE best freshwater fish there is. Walleye and Muskies/Pike a very good eating too and of course trout, but not big Lake trout for some reason they don't taste very good compared to a clean stream cutthroat. I remember catching and eating trout up in the High Sierra in California and they were delicious, being freshly caught makes a difference with a lot of seafood/freshwater fish. Fresh shrimp or scallops really makes a difference.

I like black cod aka sable fish. Smells like butter. Flesh is sweet and buttery. And yes always bleed fish. I live in Alaska and always bleed my salmon etc before killing them to let them pump the blood out. I slice each gill to bleed it.

I've heard about the Ayu or sweet fish for years but I didn't know it tasted like fruit. I found out that Ayu can also be found in China, Korea and Taiwan but the increasing pollution of their rivers has caused decline in their population in those places. Ayu like pure, clean water so Japan's clean rivers are where they are most common.

You look good in your fishing clothes, buddy! I can't imagine a fish that tastes like watermelon. I want to stay for just a week while eating these kinds of foods in this clean watery neighborhood. My mind and body will be very healthy. Your videos are always interesting, but especially these Japanese series are more fun!
