We have some weird sushi in Canada too (adapting Asia trends). We also have this buffet called "Mandarin" which promote these westernized Chinese foods. Mostly fried and heavy sauce. I think you just need to respect those foods, which has cultural impact. Think about Singapore foods. It's a lot of Indian and Chinese fusion (plus local ingredients and modification to foods for health). They turned out so delicious!
