Nitamago, are pickled eggs found in râmen but not only!
In Japan, they are eaten on their own or simply with rice and can be used to make onigiris!
For 3 eggs you will need :
- 3 eggs
- 1.5 tablespoons of water
- 2 tablespoons of soy sauce (www.satsuki.fr/sauces-soja.htm)
- 1 tablespoon of mirin (www.satsuki.fr/mirin.htm)
- ½ tablespoon of sugar
Preparation:
- Bring water to a boil
- Pour the marinade ingredients into a saucepan
- Bring to the boil and boil for 1 minute
- Set aside
- Add the eggs and boil for 6 minutes
- Cool the eggs in cold water
- Spread the eggs
- To marinate, use a plastic bag and a bowl, add the eggs to the bag and add the marinade
- Leave to marinate for a maximum of 1 to 3 hours (if you like a stronger taste you can leave it overnight)
That's it! You can add them to your ramen or eat them with rice!
For the onigiri you will need :
- 1 nori leaf (www.satsuki.fr/sushi-nori-et-...)
- For the quantity of rice, it depends on the size of the onigiri, Maya uses the equivalent of a small bowl of rice
- 1 nitamago
- 1 teaspoon of white sesame seeds (www.satsuki.fr/sesame.htm)
- 1/2 teaspoon of aonori (www.satsuki.fr/algues.htm)
- Plastic cling film
