I love how Korea does their fried chicken, but nothing beats Japanese Karaage for me.

I tried this method and the result was amazing! The chicken was so juicy inside yet super crispy on the outside. What I really like about this method is the fact that I can cut my chicken into bite size hence reduce frying time, retain the juiciness of the chicken (often difficult to do with small bite sized meat), the oil doesn't get burnt with frying flour for a long time that dropped into it

Chef Osawa is so talented! He has such good understanding of flavours, texture and technique. I was searching for the right karaage chicken recipe, this is perfect. The scallion and ginger water makes a HUGE difference in the recipe. The most underrated cooking channel!

It's very different from how I've been making it, but looks very yummy! I prefer 100% potato starch rather than a flour/starch mixture, and I usually grate ginger + garlic into soy sauce, sake, and mirin and let the chicken marinate in the mixture for 30 mins - 1 hr before coating and frying. This method seems a lot faster, I'll have to try it some time.
