Meat Eater goes VEGAN for a week (life changing)
HI BBY! I tried being vegan for a week! Welcome to this vegan, healthy & realistic what I eat in a week video! I am so excited to share all the easy and healthy vegan recipes I tried to fuel myself as a college student this week, being inspired by BuzzFeed and Linda Sun vegan what I eat in a week videos. Trying a vegan diet for a week was challenging, but ultimately SO amazing!!
I'm also going to be filming a week of celebrity what I eat in a day videos which I'll post next Sunday, so I hope you're ready for that! Comment what celebrities you want me to include in the video :)
Vegan Blueberry Apple Crisp recipe:
Fruit filling: 3 cups chopped apples, 2 cups blueberries, 1/3 cup maple syrup, juice of 1 lemon, 1/4 cup whole wheat flour, 1 tsp cinnamon, 1 tbsp vanilla
Crumble topping: 2.5 cups rolled oats, 1.5 cups chopped nuts, 1/2 cup coconut oil, 1/2 cup maple syrup, 1/4 cup whole wheat flour, 2 tsp cinnamon, 1 tbsp vanilla
Pour fruit filling into a large pan, top with the crumble, then bake at 350 for 90 minutes.
Vegan Nacho Cheese Recipe:
-3 cups chopped potatoes
-2 large carrots
-1 large butternut squash
-1/2 onion
-enough water to cover veggies (reserve 1/4 cup to blend)
-1/2 cup soaked cashews
-paprika, garlic powder, salt & pepper to taste
-1 tsp mustard
-1/3 cup nutritional yeast
Boil the veggies for 30 min or until soft, then blend with the rest of the ingredients and 1/4 cup of the reserved water you used for boiling. Once it's smooth, serve with pasta or add to tacos!
Jazmin Tyler Brownie Granola Recipe:
-3 cups rolled oats
-1/3 cup cocoa powder
-1/2 cup maple syrup
-1/4 cup coconut oil
-1/2 cup almond butter
-1/2 cup walnuts
Bake at 350 for 25 minutes!
