This is a staple in the South! It’s taken me years to like though, because of the sweetness 😂 but the best I’ve ever had used cheddar cheese, shredded with minimal sugar. So so good!😊
@janesays1278

I’m sorry… there’s supposed to be sugar in pimento cheese? I’ve had it before from a specialty cheese shop in Michigan, my southern ex used to make it (with way too much mayo), and I’ve made it on occasion, and I had no idea people put sugar in it. Can you speak to how sweet it normally is supposed to be?

@@janesays1278 so I’m from North Carolina, so I can only speak to that style. It surprises me that sugar is used at all, since we normally don’t mix sweet in savory in spreads and “salad” items. But anyway 😂 it’s normally not a whole lot of sugar, but just enough that you can definitely taste it. I would say if you’re making a big batch like my granny made, it would probably be about a quarter cup? Sorry I’m not more exact, I never got the recipe cause I hated it so much 🫣
@JacquelineUnderwood
@JacquelineUnderwood Жыл бұрын
I’ve never had it be sweet before, just normal mayo, pimentos, and cheddar. My parents will add other peppers to make it spicier too. That being said, acid cuts sweetness so maybe try adding a touch of acid to yours, to combat the sweetness you’re tasting

I'm from the South. I love pimento cheese. We make a lot of it. We use Cracker Barrel Extra Sharp Cheddar and Bama mayo. (I might try Kewpie mayo next). We add some garlic powder and a dash of Lea & Perrins Worcestershire sauce. We put it in baked potatoes, grilled cheeses, cheeseburgers, on assorted crackers or plain white bread eaten cold. We've even made it into a hot cheese dip. I love 🧀. Period. 😄

Pimento and cheese was a staple in my family's southern home. I just made some the other day. This is how I like to make it which is only a slight variation of my grandmother's version. Sharp cheddar grated medium or coarse Mild cheddar fine shred (or the Mexican blend in fine shred) Pimentos (not really drained just scoop out of the jar with a fork you want a little of the juice) Onion powder to taste Garlic powder to taste Cayenne pepper to taste Mayo (to taste) Cottage cheese (also to taste. You don't want it dry but not soupy either.) You want to go easy on the mayo and cottage cheese adding a little at a time till you get the consistency you're looking for. I like mine with lots of cayenne and seasonings and cottage cheese and pimentos and just enough mayo to combine it well. My grandmother used more mayo than I do and usually only used sharp cheddar and mild cheddar not the Mexican blend like I do and she didn't use as much pimentos as I do. And I LOVE it on townhouse crackers with a top of hot sauce and a halved cherry tomato laid side by side. Much better than on plain white bread fold overs like when I was a kid lol my mom loves using it for grilled cheeses specially when we have chili and veggies beef soup. She also likes putting in tortillas like a quesadilla for a snack. It's also really good in lettuce rolls. Lol we grew up having a batch of it in the fridge almost at all times specially in the summer so we tried it in all kinds of different ways.

Pimiento cheese is wonderful. I agree with your mom. I measure with my heart. I don't think my mother or grandmother measured recipes exactly either. A cup could be Aunt Susie's tea cup or cousin Betty's mug. Flour came from a big bin in the sideboard that you sifted directly into a big bowl. The food was always amazing so measuring with your heart is a good way to cook.

Cheese Pimiento is a part of Filipino cuisine. Apparently it was lunch fare in the 50s. But by the time I grew up in the 90s cheese pimiento was already a grocery store staple for sandwich spreads. It was a complete surprise when I discovered years later that this was a product of the time the US colonized the Philippines for 44 years. Most filipinos dont know either. So yes we pronounce it Cheese Pimiento and we consider it already part of Filipino cuisine.

My dad is from Scotland, he would make me a roasted cheese, which is cheese on toast made in the oven. I woke up this morning craving it, I haven’t had it in over 20 years. So funny that I saw your video this morning. Nostalgia ❤

I LOVE Pimento Cheese! I’m in the southern, US, so it’s readily available on most grocery store cooler shelves. As with anything else, some brands are better than others, but mostly, it is all YUMMY! 😋 After your video, I think I need to make some of my own! ❤

Girlie that’s pimentos and cheese spread in the south where’s it’s from it’s regular cheddar cheese pimentos and Mayo or metrical whip but we don’t make it like a sauce it stays like the cheese just enough Mayo to make everything hold together also the pimento peppers are pronounced like Pu-min-toe

It’s great on Ritz & saltine crackers too! AND it makes a great grilled cheese with some cooked bacon on it too, or vlasic dill slices!

This reminded me of the sandwiches served at lunch at my HS in the Philippines. That was the only time I’ve had it. Thanks for the recipe.
