Wouldn't and induction cook top like the Nuwave PIC (Portable Induction Cooker) work? They are very precise.

@kylometa72 ebay, search for "pid temperature". Make sure you know what you're doing before wiring up something wrong and either blowing something up, starting a fire or killing yourself. PID controllers come in various flavours, and the cheaper Chinese knock off models on eBay may have limited programmability, e.g. can't change thermocouple type. Also, make sure you know if you want to use one with an internal relay, or a relay control output that hooks up to an external relay.

Can you explain how the thermocouple is threaded through the top? Thanks.

Cool, a fellow DIY sous vide geek! I tried that crock pot, and really didn't like how long it takes to react. Have you tried a rice cooker? It has a hotter burner and a more direct thermal path from the burner to the water. In my experience, MUCH more easily AND more accurately controlled. Check out my setup in my "Sous Vide, Reverse-Seared Ribeye Steak" video. ;-)
