You are looking gorgeous girl! This is what I will be doing with the tomatoes I have in my freezer from last year, just cut tomatoes. And the peels fall right off after they are frozen, and I dehydrate my peels for tomato powder so its a win win :)

Thanks for the video. I did some canning last week that I have not done for 40 years. Made strawberry jam, stewed tomatoes and peaches and they came out good. Only 1/2 pints .

Hey Jeni, left another comment pertaining to tomatoes but have an unrelated question. Do you have any cross body no tie aprons? I want one and I sew so am willing to make them but would absolutely love a tutorial on how to make one. Always loving your kindness and encouragement to others. This is a great video both for beginners and as a refresher for old heads like me. I love to learn and I can always carry away something new and useful from these videos. God bless.

Great "start to finish " tutorial! I was wondering if I could add some bell pepper 🫑and onions 🌰to the jars if I don't have a lot of tomatoes. Would the processing time be the same? I would puree when I opened the jars to make sauce.

That would change the acidity and you would need to pressure can them. But yes, you can add them. Different timing, different procedure. 😊

I love your prep day/can day tip!! Very practical way to not get overwhelmed!!! In the spirit of challenges...can I suggest a tomato/squash or tomato/okra challenge? I think we have all been overwhelmed with a zucchini/ squash harvest and this seems to be the only approved way to can it...I need inspiration! Thanks for all you do

Nice. I go through a lot of tomatoes too! I was dreaming when you said you canned 200 pounds of tomatoes! Nice to be doing it in quarts too, you can use in chili, lasagna, soup, etc. Agree with you on the the wide-mouth jars…easier to fill, empty, and clean. May try the PUR jars…have not seen their lids sold separately yet. Thank you! All your videos are informative and well done. Now if I could just get your hubby from taste-testing everything! 🙈

Great tutorial but I was wondering if your recipe calls for salt? Back in the day, we added about a tablespoon of salt.

Salt is always optional. You can still add if you like it salted. I can lower sodium. (High bp!) 😊 But salt is just for flavor not preserving.

Did you ever find out if the jars contain lead or other toxins? These jars are made in China, and questionable glass products have been an issue in the past. I tried the lids pressure canning chicken yesterday, and have a 100% success rate thus far.

I did a lead test myself on camera and they tested negative. Then the company reached out to me and let me know they are lead free and the lids are boa free. They are a great product! 😊

Used Pur for the first time (new jars, lids and rings) a couple of months ago. Unfortunately, I had 4 jars out of 12 that didn't seal. I have never had failures like that in all the years I have been canning. I am very careful about following approved guidelines....not sure what happened...

I’m not sure, we’re they the lids that came on the jars? I had 1 not seal in my second canning session. The ones that come in boxes of 12 lids, work great! 😊

It was an unopened set of 12 jars, lids and rings. I was surprised and would only use them again if nothing else is available.

They now have boxes of lids, I use them all the time and they all have sealed. And holding! 😊 Check your ACE hardware.

Target a bit cheaper has Ball lids. Canningpro.com has some, Tractor Supply... Slowly the supply is coming in.

Nope. I put them into my compost. I dried them one time (8 years ago) and didn’t care for the taste of the powder. 😊

If you are going to peel the tomatoes, what is the purpose of washing them first?

They split on the water, I don’t want extra bacteria in them when they are only going to be water bath canned. If you ouzo from your own garden, then maybe you don’t need to but from the store where people touch them, I always wash them first.

Why do you not have to stir or dissolve the Citric Acid? How will all the tomatoes get enough? Do the yellow tomatoes need more Citric Acid since they are low acid?

No, same amount of citric acid and the tomatoes will boil in the jars displacing the tomatoes and the citric acid stirs right on. But you can stir it yourself while de bubbling also. 😊

I canned up apricot habanaro jan in pur jars. 4 out of 9 lids failed. I simmered the lids I wonder if I should not have heated them? I love the jars

They changed the compound in the lids to improve it. Did you happen to use a box of their next generation lids? The compound is now orange like the Ball and Kerr. They seem to seal better. 😊 Apricot habanero jam sounds delicious!

I tried my hand at pressure canning spaghetti sauce a few weeks ago. Flavor is fabulous. But I should have simmered it longer. I'll just keep trying.

You can always add a little cornstarch after you open the jar up to thicken it to your liking. I know after I've picked, cleaned, and food milled tomatoes, then cooked and added ingredients - and now have to face canning 7-14 quarts before I can sleep - the last thing I want to do is let the sauce simmer longer - lol!

This was an excellent video!!! I love how you walked us through the entire process from new jars to canned. Silly question....When you were washing the wax off the tomatoes, it looked like there was soap in the bowl. I know you said add a little vinegar to remove the wax, do you also add a little soap? Also, I know you can use bottled lemon juice or citric acid, can you tell a difference in the flavor? Like, can you taste the lemon juice when canning, and is that why you chose to use the citric acid. I love lemons, but don't want my maters tasting like lemons lol Oh, and thanks for all you do!

I’ve always used lemon juice because as many years as I’ve canned, I’d never heard of citric acid. 😳😳😳 lol I am extremely interested in your answer Jeni because I actually have some and will definitely use it if it’s better. Lemon juice has an expiration date of like a year and citric acid last LOTS longer so would be an easier solution. Thank you for the thorough lesson. Always great to have a refresher and learn about new tools and techniques. 👩‍🌾💛

Thank you! Yes, lemon juice alters the flavor. I used to only use lemon juice until I tried citric acid and realized the difference. I used fruit and vegetable soak in my bowl, no soap, but since this is a Pur Mason video, I didn’t want to point out a brand so I said to just use vinegar and water which is my old standby anyway. 😊

Please don't be afraid of pressure canning. I much prefer to pressure can over water bath canning. A pressure canner is just like any other tool. Do your research and read the manual. When I started canning, I had no one to teach me. How I wish I had KZbin to refer to in those early days. Even after decades of canning, I still find myself learning and I am grateful to Jeni and others who post canning videos to KZbin.
