Jenn enlists the help of Sang Yoon, the guy behind Father’s Office and Lukshon, to get nerdy about frying. Sang may be best known for his Father’s Office burger, but he’s a mad scientist of a chef who Alton Browns whatever he’s making, and he knows how to make some pretty excellent fried chicken.

Hi everyone!! Thanks for watching this week’s nerdy episode of “The Bucket List!” I asked chef Sang Yoon to help me break down the science of frying and how to make the best fried chicken. We visited Tokyo Fried Chicken Company in Monterey Park (highly recommend!!) then head to his test kitchen to make chicken together. Jenn you are a writer an yet everything is a "situation" when you talk about food. Having sauce on the side is not a situation. Adding heat to something does not make it a spicy situation. Not trying to nick pick but, you can do better than some hipster overuse of a word that does not even fit what you are talking about. It is the same with people who call everything Epic or women who call everything cute.

You want to learn frying see how the Chinese do it on a hot wok. They take it to smoking point to fry to that there no sogginess.

actually they use recycled oil from the previous batch , that was the water is emulsified into the new oil
