If you pan seer the fillet, skin side down, the skin and scales come off so much easier than flaking them all over your kitchen. Just toss it on a hot pan and lift the meat while the skin sticks to the pan, scales and all. Rest of yout recipe looks amazing. Thank You!

HOLD THE PHONE. I just made this dish (skin-on) EXACTLY how she describes in the video and this was the best salmon i've ever eaten! My husband and I are salmon lovers but I could never get an amazing fresh salmon fillet cooked just how I like it, so I always purchase frozen. I've tried fresh salmon with dijon mustard, fat free yogurt, lemon pepper, asian-zing style.. It always missed the mark for me. I bought a fresh fillet and did word-for-word what she said and it is hands.down.the.best! I love flavor with a punch, and that fish residue oil mixed with fresh garlic, lemon zest (which i've never cooked with) fresh lemon juice and fresh baby dill... It looked even more beautiful than the thumbnail! My in-laws also LOVE salmon and i'm inviting them over immediately and cooking this for them. Thank you and God Bless!!

This was so helpful! I came here because I just tried cooking it with the skin on and wasn't successful. I didn't know you were supposed to dry the salmon before adding it to the pan and to let it warm a bit first! this video was so extremely helpful for me on how to remove scales and also how to remove the skin as this was my first attempt at pan searing salmon! a great video for a beginner like myself. My sauce came out way too lemony not sure where i went wrong but the salmon was still delicious on its own!

Too much lemon zest most likely as grating too much can overpower the fish, but hey that is great to hear it still turned out well for you and you enjoyed it

Depending on your lemon, also, there can be more (diluted) or less (concentrated) water in the juice itself. This can vary by season, variety, freshness, and more!

I like using the sharp side of the knife held at a 90 degree angle. As long as you're careful not to press down, it won't cut the fish, but the sharp edge grips the scales better than a dull edge and i'm able to get every single scale off with some effort. A smaller steak knife is a little easier to use to get the edges too.
