if you read the ingredients of the Italian seasoning it will tell you if it contains fennel. More than likely the fennel is in the sausage.

I'm so glad you cook for two, instead of the massive amounts lots of cooking videos show. Also, I'm 84 and can't spend a lot of time cooking. I sit on a stool to cook, so making dishes in 30 minutes or a crockpot recipe is perfect for me.

Italian seasoning: 2 tbsp dried oregano, dried basil, dried parsley 1 tbsp dried rosemary, dried thyme, dried red pepper flakes, garlic powder I thought the red pepper flakes would be weird but it's not you can go with or without I went full on. Made the manicotti casserole. I used 1 pound of ground beef, and a 1/2 pound of sweet Italian sausage, ground. Other than that, I made it like the way you and Bunky did. The only issue with it, was with my son (42 years old) put a too big piece in his mouth at once, and almost choked on the melted cheese! lol. My one picky 7 year old granddaughter ate 2 of the manicotti pasta! She took out the cheese, probably because she heard her uncle say how he almost choked. Great recipe!
